Hoy cociné con mi madre 🙂 y nos hicimos unos frijoles deliciosos, de esos con los que uno siempre quiere más. Los acompañamos con arroz 🍚, plátano maduro asado, 🥑 aguacate y un poco de salsa picante, simplemente deliciosos!

Para prepararlos: - Dejar remojando de un día para otro para que se hidraten
- Botar el agua en que se remojaron, y ponerlos a cocinar en la olla a presión, con agua limpia que los cubra y junto a un trozo de 🥕, por 15 a 20min
- Destapar con cuidado, sacar un poco de caldo y la zanahoria y licuarlos, y luego reincorporarlos a la olla. - Poner a cocinar a fuego 🔥 alto y echar hogao y sal al gusto. - Después de un rato, bajar el fuego y dejar espesar
Y listo! Súper fácil y rico

Mi delicioso desayuno 🥞 de esta mañana, yo no sólo amo los #pancakes, amo estos pancakes!!

Aunque los otros #fitpancakes me parecen deliciosos 😋, estos me encantan porque tienen ese sabor de los pancakes 🥞 “clásicos” pero hechos con ingredientes saludables -
Para hacerlos necesitan:
🥞 1 taza de leche 🥛 vegetal, yo los hice con leche de coco
🥞 2 cdas de aceite de 🌴 coco
🥞 1 huevo “vegano” (1 cda de linaza molida remojada en 3 cada de 💦 agua)
🥞 1/2 taza de harina de avena
🥞 1/2 taza de harina integral
🥞 2 cditas polvo de hornear
🥞 2 cditas de miel 🍯 de agave
🥞 1/2 cdita de sal

Para prepararlos mezcla la leche, el aceite de coco, la miel y el “huevo”. Aparte mezcla las harinas, el polvo de hornear y la sal.
Luego mezcla ambas con movimientos envolventes, sin batir.
Calienta un sartén y engrásalo con un poco de aceite de coco y pon la mezcla, cuando se llene de burbujas, voltéalo y espera a que se dore.
Repetir hasta tener una deliciosa torre de pancakes y servir con tus toppings favoritos

Hoy me puse creativa y este fue el almuerzo que resultó

Tomates 🍅 rellenos con quinoa, champiñones 🍄 y maíz con curry, acompañados con ensalada 🥗 de lechuga, zanahoria 🥕 pepinos 🥒 con vinagreta de aceite de oliva y vinagre balsámico y centavitos de plátano verde
Quedaron deliciosos!

Para el relleno: - La quinoa yo la preparo el igual a como preparo el arroz 🍚, 2 medidas de agua por una de quinoa, con sal y un tris de aceite de coco.
- Los champiñones 🍄 los salteé junto al maíz con mantequilla de @alma_foods, luego le agregué pasta de curry y la quinoa y revolví todo muy bien.

Para los tomates:
- Corte la parte superior y con una cuchara les saque el relleno, teniendo cuidado de no romperlos
- Luego los puse un rato boca abajo sobre papel de cocina
- Precalenté el horno a 180grados, y puse papel parafinado sobre mi bandeja.
- Sazoné los tomates con sal y pimienta, y los engrasé por fuera con un toque de aceite de coco para que no se pegaran, y los llené con el relleno que ya tenía listo
- Los metí al horno por 45 minutos y listo!

Tofu scramble!!!! I’ve been craving it for weeks and I finally made it! I used firm tofu for this one and blended it with a little almond milk and added: turmeric, paprika, garlic salt, onion salt, salt and pepper. Then in my cast iron pan I started cooking onions, garlic, tomatoes, and asparagus. Once softened I added the tofu and continue to mix and stir until it became this beautiful scramble! Garnished with cilantro and avocado and a tiny bit of sriracha 😭💕🌱 .

Der erste Versuch, das traditionelle weihnachtliche Familienessen zu veganisieren war erfolgreich (Rezept ⬇) 🙌💪 Selbst die böhmischen Knödel wurden (gegen Widerstand meiner Oma 😅) perfekt. Die ,,Bratensauce,, wurde zu einer cremigen Pilz-Haselnusssauce umfunktioniert 🍄👌 Zutaten für die Knödel 🌱

1 Vollkornbrötchen
1/4 L Mineralwasser 
500 g Vollkornmehl
3 EL Leinmehl (liefert noch etwas Protein und eine schöne Farbe) 
1 Tüte Backpulver 
1/2 TL Natron 
1 TL Salz
Petersilie 
Zubereitung der Knödel 🍴

Brötchen in Würfel schneiden. Das Vollkornmehl, Leinmehl  Salz, Backpulver, die Brötchen und Petersilie in einer Schüssel gut vermischen. Das Mineralwasser dazu geben, gut kneten (evtl. noch einen Schuss Wasser dazu) und zu einem großen Knödel formen. 
Danach in reichlich kochendes Salzwasser geben und 30 min. im geschlossenem Topf kochen lassen. 
Zutaten Pilz-Haselnusssauce 🌱

Pilze
Kl. Zwiebel
1/2 L Gemüsebrühe 
4 EL Haselnussmus 
Haselnüsse als Topping 
Pfeffer 
Thymian 
Zubereitung der Pilz-Haselnusssauce 🍴

Zwiebeln würfeln und in etwas Öl andünsten. Pilze in Scheiben schneiden und dazu geben. Mit der Gemüsebrühe ablöschen, das Haselnussmus und die Gewürze einrühren und aufkochen lassen. 
Als Topping haben wir noch Haselnüsse darüber gegeben 😋

There’s so much to choose from: Eggnog, Jamaican Sorrel, Apple-Pear Punch, Gingersnap Shakes....but I would have to say my all time favorite is a simple hot chocolate/carob.

 A Bowlful of -----BASMATI TUMERIC RICE ----💚💛💚💛 home cooked fresh and very easy to make comfort food, for which l used soaked basmati rice,  cooked by adding water, 1/2 tsp turmeric, salt and pepper when half cooked added greenpeas to it. Arroz con lentejas, acompañado con 🥗 ensalada de pepino 🥒, tomate 🍅 y aguacate 🥑 y 🥔 papas con perejil.

Hacer este arroz es muy fácil. Lo primero que debes hacer es dejar remojando las lentejas de un día para otro. Las proporciones que yo uso son 2 medidas de lentejas por 1 de arroz. 
Luego, en una olla pon a cocinarlas en agua limpia por 10min - la cantidad de agua en que las cocines debes medirla de acuerdo a la cantidad de arroz que vayas a preparar.

Cuando pasen los 10min, agrega el arroz y cocínalo normalmente. 
Sírvelo con un toque de cebolla sofrita en un poquito de aceite de oliva.

My lunch for today, 
Rice 🍚 with lentils, sided with 🥙 salad and some 🥔potatoes with parsley.

Making this lunch is super easy. First you must leave the lentils in water overnight. I use 2 measures of lentils to 1 of rice.

Cook the lentils in clean water for ten minutes - you should measure the water according to the amount of rice you are preparing.

When the 10min are up, put the rice in and cook it like you usually do.

Serve it with a little of onions made with a pinch of olive oil.

The gorilla 🦍 diet is working haha I wasn’t able to workout my legs for 2yrs but thanks to my physio, I’m slowly getting back and I’m able to squat now! This is 80kg and I’m doing it without much effort, a bit far from my best (120-140kg) but I’m not sure if I’ll increase the volume, I’m a bit scarred of getting injured again 😅

 I use a hot water bottle inside an ice-box, and it works so well. I use boiling water in the hot water bottle and change the water every 12 hours. 
Alternatively, you could use a lamp inside a small cupboard.

Once ready, place the tempeh in the fridge to stop the fermentation. Because the bag has pin pricks - you must place it into a new ziplock. 
The tempeh will last for one to two  week in the fridge. Note that it tastes better the fresher it is.
You can also freeze your tempeh for 3 months to enjoy later. Use the tempeh 2 days after thawing.

Wasn't going to post because it wasn't pretty but why not haha vegan bacon, vegan cheese, and tofu egg. Next time I will cut the tofu thinner and actually have onion powder but besides that it was pretty good.

Made These Yummy Vegan Gluten free Cookies the other day 😋 You can actually see them in my last vlog 😉Also I am officially celebrating my 8th year anniversary of being vegan this month! I don't remember the exact date it happened but it was in early December. What I do know is that it was one of the best decision I ever made. I was reading @aliciasilverstone 's book The Kind Diet which was gifted to me by @rachelle_loves_yoga and she was describing the way the animals were treated. And how the cows were separated from their babies to give their milk to us and all that...I was crying in my bed reading about it and decided to go vegan cold turkey! Woke up the next day, became vegan and have been vegan since then 💚🌱

• Poner a tostar 2 cdas de harina integral hasta que tome un color como “café con leche”
• Agregar 1 taza de agua 💧 y revólver bien. Poner a espesar.
• Echar champiñones cortados y arvejas tiernas, sal y pimienta al gusto, revólver y dejar cocinar.
• Agregar 1 1/2 cdas de crema de coco 🥥, revólver y servir

Vegan Burgers by @natalieyonan 💖

Recipe:
(makes 12 small burger patties) Time: 1h. • 8,8 oz mushrooms
• 1/2 cup beluga lentils
• 1/2 cup millet
• 2 cups water
• 5 onions
• 3 garlic cloves
• 1/3 cup sunflower seeds
• 3 tbsp tamari
• 1/4 tsp smoked paprika
• 1/4 tsp black pepper
• 3 tbsp oil for cooking

DIRECTION
1. Boil 5 cups water in a saucepan, add lentils and millet. Cook over medium heat for 11-15 minutes or until cooked through and no water is left.
2. Slice the onion in the shape of half moons, while the lentils and millet boils. Put a skillet over medium heat and pour in 2 tablespoons of oil. Fry the onions over low to medium heat for about 15 minutes or until caramelized and golden.
3. Slice the mushrooms. Put a frying pan on the average temperature and pour in the remaining tablespoon oil. Fry the mushrooms until most of the liquid is gone.
4. Add the sunflower seeds in a food processor and mix until i becomes flour. Now add caramelized onions, boiled millet and lentils, and fried mushrooms in a food processor along with tamari, black pepper, garlic and salt. Mix to a 'mince'. Not completely smooth but still smooth enough for you to be able to form patties.
5. Shape the burger with clean hands. Have a bowl of cold water to dip your hands from time to time, this prevents the batter from sticking to the hands. It is good if you let the surface of the burgers get dry before cooking (and possibly turn them once). You can prepare the burgers a day before and let them stand in the fridge in the meantime.
6. #Grill or fry the #burgers a few minutes until lightly browned on both sides. Serve with raw ketchup, #burger dressing, avocado & pickled red onion and cabbage, gluten free bread &  a few green leaves.
