I won’t lie, it’s been a busy day. Code orange storm Ophelia slowed me down by two days and I’ve been run of my feet to get Diwali sorted (and work and study and yoga!). But it’s done and we’ll sit down shortly to express our gratitude for all we have. And then devour that abundance. Our meal tonight will consist of many small vegan dishes. in my house no Diwali meal is complete without Okra and Karela. A sweet & spicy mixture BHINDI(OKRA),TAMARIND & JAGGERY infused wt da sensual aroma's of COCONUT & MUSTARD seeds. Unfortunately, BHINDI /OKRA/LADY'S FINGER isn't a hit wt many around. An everyday Indian cook usually fails to see beyond da regular BHINDI CURRY. A complete lack of experimentation makes it one of da most underrated veggies in da culinary space ; GOAN CHICKEN CURRY - This dish was a typical GOA CHICKEN CURRY … Tender Chicken cooked in a spicy tangy 'spice paste'.This Goan CHICKEN CURRY packs a PUNCH but da flavours MELLOW as it cooks & da BASMATI RICE it's dunked on, adds a cooling touch. It was an amazing infusion of Indian flavors wt a succulent piece of CHICKEN ; TEA TIME was simple Teabags wt da usual SUSPECTS & BISCUITS . . .
