the perfect black sesame waffles: crispy edges, fluffy and tender on the inside, and subtly nutty | served with maple syrup, toasted nuts, and homemade matcha ice cream made with @matcha_konomi matcha powder (recipe is in an older post)
guys, i don’t think i’ve ever been this excited about a recipe before. these charcoal black waffles have been all the rage in bougie cafes everywhere lately, and i tried looking for an adequate recipe online but they were all either very heavy on the butter/milk/eggs/refined sugar or they didn’t use activated charcoal (the ingredient that results in the dramatic jet-black hue). i decided to make my own instead, and after tweaking it/ testing it three times i have to say this one is a winner. these waffles came out so perfect and were so so good i was literally jumping up and down while taste-testing them
Black Sesame Waffles (refined sugar free, vegan)
* 1 1/4 (180g) all-purpose flour
* 1/4 cup (40g) cornstarch
* 1 tbsp + 1/2 tbsp baking powder
* 1 tbsp activated charcoal (you can find this in any Whole Foods/health store. It’s optional— if not using, waffles will just be grey, not black)
* 1/4 tsp salt
* 1 c + 1/2 c almond milk
* 2 tbsp + 1/2 tbsp apple cider vinegar or lemon juice
* 1 tsp vanilla extract
For black sesame paste:
* 1/2 cup (60g) roasted black sesame seeds
* 3 tbsp maple syrup
* 2 tbsp sesame oil
To make black sesame paste, pulse roasted black sesame in a coffee grinder or food processor until fine (if using raw sesame seeds, toast on stove in a skillet first), then add in maple syrup and sesame oil.
Next, whisk together dry ingredients in a large bowl and combine black sesame paste and remaining wet ingredients in a separate smaller bowl. Gradually add the wet ingredients into the dry and stir until just combined— it should be a smooth, shiny batter, with no lumps. Preheat and grease a waffle iron and pour the batter in, making sure each waffle is fully cooked and crispy before attempting to open the waffle maker. Recipes makes about 4.5 regular-sized round waffles.
Sunday is Family Day 👪😍 Let's go gai gai 🚶♀️🚶♂️🏃♂️🏃♀️ Have waited for the opening of this #mellow store since October @ OTH. After seeing it delay opening twice, it finally commenced its business yesterday 🎉🎉🎉 This looks so much like the one we tried at #Dotonbori this April. Fancy a dessert in a stone bowl? 😋I absolutely love this concept for hot desserts! The brownie was kept warm till the very last bite and the marshmallows on the side were delightfully soft and slightly chewy from the heat of the stone bowl 😍 Every bite was deliciously fudgey and moist 🤤 A little too sweet for my liking but overall still a pretty good treat 👍🏼
