Anyone that knows me, knows I'm a super picky eater. I also hate taking forever to cook my meals. I started #blueapron a month ago and I'm actually enjoying this. I've been able to leave out small things that I know will ruin the meal for myself. I wake up on Saturday morning to a delivery of fresh food at my door for the week, and all the ingredients needed for my dinner. I obviously still have to do all the preparing and cooking, but with the perfect amount of everything it's so much easier. You know what night it is! Best night of the week, Pasta Night! Today is Fusilli Bucati Pasta with summer squash, sweet corn, and tomatoes
If I could hug a bowl of pasta, I'd hug this one. New favorite noodle: Fusilli Bucati, a corkscrew noodle that's hollow in the middle so it holds more sauce. The squash was cooked just enough to where it was soft on the outside, but still had a bit of crunch for some good texture against the noodles. It was topped off with pecorino cheese that had a sharp tang against the slightly sweet - spicy sauce.

My sister sent me a Blue Apron gift code a while back and I was finally able to use it! I was able to order 2 family meals. They didn't have a Keto or low carb option so I chose meals that I knew I could change to fit what I'm allowed to eat. This one was really easy. I didn't eat the rice and had a side of salad instead. My kids had the rice and carrots. It was super easy to make and very delicious.
This week I also made sausage, onion and peppers in ciabatta rolls with a side of potato wedges. My thinking was I could make the sandwiches for the kids and just eat the sausage and peppers. Well that was easy to do. Instead of 4 rolls they only packed 2 and no potatoes!!! Anyway both meals were delicious and easy to make. And free!
