Tonight's #BlueApron dinner: masala spiced beef w/ plum rice & lime yogurt #blueapronmeals After mixing the plum into the rice according to the instructions, I looked at the picture on the card & it didn't look anything like mine. This did turn out prettier, though, & very tangy!

Decided to change it up this week and not do the #7DSD . Right now I don't have anything coming up to prep for. I have weight to lose but this is a crazy week and I want to give the 7DSD my full attention so it will wait for a few weeks. We also got a free week of #blueapronmeals so I wanted to try those out, some are #tiuapproved and some aren't. Tonight's meal was pretty good - Cajun spiced chicken with potato salad and coleslaw. Normally we don't eat white potatoes and the dressing in the slaw had white sugar in it but if I repeated I would sub in maple syrup because it's taste the same. The 2 person meal made more than enough for me and my husband. Plus it was a refreshing change to spend some time in the kitchen together tonight and cook up something delicious! As I told him, I wouldn't have necessarily picked to put green pepper and onion in potato salad but the entire meal was delicious! Thanks @blueapron !
This was 1 of 3 Blue Apron meals Nick said he def would not eat. He still made it for me tho and while making it he said he was intrigued. Then when he ate it, he said he liked it alot! I come back to this beet pasta frequently because it's tasty and fun (AND has beets & greens.) Inspired by a one time @blueapron, tonight it included beet greens/stems with spinach and garlic, finished with sautéed shredded beets and butter. Mozzarella on top 👌🏼
Calvin loves this pasta, and tonight he kept saying beets and mmmmmm while he ate 😊
Tonight's #BlueApron dinner: tomato saffron risotto with sautéed summer squash & baby greens salad #blueapronmeals 🥒🥗 I love risotto & wished there was more Parmesan to sprinkle all over this dish. 🧀 This didn't come with a protein so I made crockpot chicken thighs in bone broth, garlic & thyme. Easy peasy. 🍗🥘
