I don't normally share what's in my kitchen, but I was asked to play along with #myrecipebox so here goes!
I make bread about 2 times a week for my kiddo's lunches and it smells and tastes as good as it looks! .
Molasses Whole Grain Bread
I usually grind up a mixture of hard white wheat, hard red wheat, soft white wheat, and 9 grain rolled oats, but I have also used Kamut, Quinoa, Teff, and Amaranth. It just depends on what I have on hand.
In a Bosch mixer (if you have a Kitchen-aid, you will need to 1/2 the recipe, it won't fit) combine the following:
5 1/3 cups warm water
1 cup sugar or honey
1/4 cup molasses
4 Tbsp yeast
Mix slightly and let sit 5 min.
2 Tbsp dough enhancer
2 Tbsp vital gluten
1 cup oil or applesauce
6 cups of whole grain flour
2Tbsp kosher salt
Turn the mixer on and add alternating cups of whole grain flour and unbleached white flour until dough cleans the sides of the bowl. Cover and let mix for 10 minutes on setting 2.
Prepare bread pans with cooking spray. When the dough is finished mixing, turn out on oiled surface and divide into 4 or 5 pieces depending on the size of your pans. Shape into loaves and place in pans. Cover with plastic wrap. Let rise until about 1 inch above rim of pan.
Pre-heat oven to 400. When oven is ready, take off plastic wrap, place pans in oven and drop temperature to 350. Bake for 35 minutes. When done place on drying racks to cool. Store in airtight container or bag. They freeze well too!
