Loaded Breakfast Hash
Cast Iron Pan
4tbsp olive oil
5 large potatoes, chopped, and drained
1 red pepper
1/2 shallot (diced)
2 italian sausage
2 tbsp paprika
1tbsp garlic salt
salt and pepper
1 tbsp parsley
Preheat the oven to 375 degrees
Heat the oil in a skillet then add the sausage. Cook for 5 minutes then add the onion and cook out for 3 minutes. Add the peppers. Melt 2 TBSP of butter and then add the diced potatoes.
Add all the spices and salt and pepper then turn over to coat all the ingredients.
Add some more oil then leave the hash crisp up on the bottom for a few minutes. Add the grated cheese then make three indents and crack in the eggs. Bake for 10 minutes until the cheese has melted and the eggs have cooked.
Top with sliced avocado and a sprinkling of parsley to serve up to share.

i combined almond milk and water in a pot, brought to a boil, then added cinnamon and the oats, and lowered heat. once the oats absorbed all the liquid, i added it a bowl, and topped with sliced banana, unsweetened choc chips, and a little maple syrup + post-picture i added a ton of peanut butter 😎 have a great weeeeek !! ☕️ The guys at @nokiahealth have just gifted me this beaut of a watch (a Nokia Steel HR) that comes with a kazillion things including a sleep monitor that wakes you up at the optimal point in your sleep cycle... I'm guessing there's no optimal point for my body (because i'm a lazy ass) but I can't wait to find out. Oh and it's also great because it syncs with an app that logs your food (but that might have to wait until after Christmas).
It's stone fruit season 🍑.

I’ve never been a huge oatmeal fan but this was amazing! I had plain oats (the flavored packs have too much sugar) but added honey 🍯, cinnamon, shaved almonds & sliced banana🍌 (not pictured) It was soo good! & comforting on a chilly morning ❄️

These Shakeology Cranberry Bliss Bars taste like a coffeehouse original, but these are better for you! Get the full recipe below. ⠀
⅔ cup dry old-fashioned rolled oats⠀
½ cup unsweetened shredded coconut⠀
½ cup all-natural smooth almond butter⠀
¼ cup raw honey⠀
¼ cup chopped raw pecans⠀
1½ tsp. pumpkin pie spice⠀
1½ scoops Vanilla Shakeology⠀
⅓ cup unsweetened dried cranberries⠀
1. Line an 8 x 8-inch pan with plastic wrap (or aluminum foil). Set aside.⠀
2. Combine oats and coconut in food processor; pulse for 20 seconds. ⠀
3. Add almond butter and honey; pulse until blended.⠀
4. Combine almond butter mixture, pecans, pumpkin pie spice, Shakeology, and cranberries in a large bowl; mix well with clean hands or a rubber spatula. ⠀
5. Lightly press oat mixture into pan. Refrigerate for 1 hour, or until set. ⠀
6. Cut into twelve bars (approx. 2½ x 2-inches). ⠀
Three ingredient breakfast cookies! (Technically four ingredients). Oats, banana, raisins and cinnamon. He loves these for breakfast or as a snack. He helped me make these yesterday by sprinkling the cinnamon and mixing the batter. He also licked the bowl clean😃. Along with those he had apple slices and chopped nuts.
Cheese was another item I thought I would have to give up when I went plant-based. I wasn't really into the store bought cheese substitutes so I just stopped consuming it for a looonng time. After about a year or 2 I tried to make the potato carrot version and it was disgusting! I formulated this recipe so that it would resemble as closely to dairy as I could. It is creamy, ooey gooey, spicy and so flavorful! This twice baked potato was the perfect vessel to enjoy the nacho cheese! Nacho Cheese Dip from my book is so tasty and versatile you can add it to pretty much anything!

My favorite late morning snack. Organic whole wheat bread topped with vegan butter, egg and avocado #breakfast
Breakfast Pizza; yesterday's bliss of goodness 🍕🍳
1️⃣ Bottom layer consists of a mix of white potatoes and sweet potatoes mixed and pressed to make a crust
2️⃣ Middle layer = scrambled eggs, a handful of cheese, sautéed peppers, tomatoes, and ham
3️⃣ Top layer completed with 3 sunny side up eggs, salt, pepper, a lil hot sauce and sprinkled with pepper jack cheese .
🔸Throw the potato crust in the oven at 350 before layering so the potatoes are soft on the inside and crunchy on the outside (my potatoes were pre cooked so it saved me ample time in the oven, left in for 5-7 minutes) .
🔸Make eggs and veggies+ham while the potatoes are baking .
🔸Once potatoes are finished, layer your breakfast pizza and broil on low for 3-5 minutes so the cheese gets nice and melty! .

Breakfast was perfectly portioned for someone who doesn't have much of an appetite
When I was making this I was suprised to find that I could have been adding more to my favorite quick ,easy and delicious breakfast.
Now i don't have to worry about overeating especially when I don't have an appetite.

1/2 cup of @traderjoes rolled oats with 1/2 cup of water + frozen blueberries and raspberries microwaved for 2 mins , stop with 30 seconds left and stir, continue to microwave and then top with half a banana, almond butter, unsweetened coconut flakes and gluten free granola 🙃🙃
Some days I make pancakes and load them up with fiber, swap out the fat, switch the flour, and attempt to make a “healthier” pancake.
Other days I follow the package instructions exactly and delight in my light and fluffy pancakes.
Allowing yourself both options is part of a healthy and normal relationship with food.
