Chilaquiles is one of my all time favorite Mexican breakfasts. @eatlalo made some of the best - and their liquados were super refreshing. Their salsas and pasteles are made in house and so delicious. Saturdays are always Pancake Day at Copper Plate. We always pair them with thick cut bacon and an iced americano or latte. Here’s how we do it: sift 2.25 cups of AP flour, 1tbsp. baking powder, 1/2 tsp salt, 2 tsp cinnamon, and 1 tbsp sugar. Add 1.5 cups of milk, 4 tbsp melted butter, 2 eggs, and 1 tsp of vanilla (we prefer @nielsenmassey). Let the batter rest for 15 minutes to an hour. Fry 1/3 cup portions of batter in 2 tbsp of vegetable oil and top with pure maple syrup and butter. We prefer a a Moka pot for all our (@thetruecoffeeroasters)espresso beverages. For an easy, no fuss, no mess way to make bacon. Lay bacon on top of a cooling rack on top of a cookie sheet. Bake for 20 minutes at 400. Enjoy!
