Bruschetta is such a great snack! Tomatoes, goat cheese (or whatever cheese), basil, onions, and olive oil on top of fresh baked bread is sooo good! Does it count for toast Thursday if the bread is lightly toasted? Is #toastthursday even a thing?

In Italy, there were multiple forms of bruschetta and crostinis served at every restaurant, one of our favorites was at a restaurant in Cleto, a small village in Calabria. Why? Because their twist was on #Friselle bread! An old traditional hard bread that softens with the moisture of tomatoes, olive oil and sometimes a quick dash of water. This ring shaped bread is super crunchy and hard as it is baked twice, but it is so delicious when it softens. We had this exact dish there and we recreated it here on our special menu this week. Try it out as an appetizer and it and see for yourself!
Side note: my grandmother used to bring a case to our house when I was little and I would love adding water, olive oil and oregano to my bread and just eat it for days!
Bruschetta and sunshine for lunch 🌤I like lashings of olive oil and slivers red onion to give it a little bite. I also rub the toasts with a clove of garlic before topping. Big flavours from simple ingredients. What's your take on Bruschetta?
