Yes these are #buckwheat pancakes in a plastic container, as I ran out of other containers to put them in. Made a big batch of them and will eat them over next week as lunch. Only problem is: they’re not very yummy so I may have to put in some fruits and bring honey and butter to make it rest better.

Little bit of experimenting here this morning as I didn't have all the ingredients for my usual oat pancake recipe. Our green pancakes turned out good! And they're jammed packed with lots of good stuff!
1 cup buckwheat flour
1 1/4 cup coconut milk
1 medium banana
1 tablespoon maple syrup
1 1/2 Tbsp pea protein powder
1 Tbsp hemp seeds
Handful of spinach
1 tsp baking powder
1/2 tsp tumeric mix (optional - this is just a mixture of tumeric, black pepper, cinnamon, nutmeg, cardamom I make up and keep handy for all sorts of things)
Process ingredients until smooth. Cook in coconut oil on a medium heat frying pan.
I've topped mine with natural Greek yoghurt, kiwi fruit and this amazing berry and seed mixture my mum got me from a local health food store. YUM!!
