I needed this salad so bad! You know when you eat something and it's just so exactly what you wanted? 🙌🏽 I had the hardest time finding healthy food in Phuket. It was hard enough to just find vegan food and everything was drowning in oil and sodium and msg. (Don't even try asking for it without because they won't do it.) Once I got back to Chiang Mai I went to the grocery store salad bar and filled up 2 containers with salad!😻 A mix of lettuces, onion slices, steamed pumpkin, kidney beans, job's tear, carrots, purple cabbage, bell peppers, peanuts, and pumpkin black pepper dressing (the best dressing ever!) Seriously I think this is one of the best salads I've ever had.👅 Last night was my last night in Chiang Mai and now I'm at the airport waiting for my flight. I may have gone to the store this morning to get one more salad to bring with me for lunch.😊 I have a loooong flight ahead of me, but at least I have lots of fresh veggies, snacks and Trail Runner magazine!👍🏽
Today's lunch. I do love it when I have some prepped food in my fridge, like sweet potatoes - leftovers from dinner - hummus, raw Sauerkraut, organic herring salad. Together with cucumber, radishes and lettuce this made a nice meal, crunchy, creamy, tangy, soft and sweet in the right combination. In this way making lunch takes 5 minutes. More time for chewing and enjoying.
Oh, and a rest of yesterday's strawberry smoothie for dessert. 😊
🍽 Bonjour ! Qu'est-ce qu'on mange ce midi ? #BuddhaBowl avec des pommes de l'île de Ré (encore ? Beh Oui, quand c'est bon on y revient ! 😂) cette fois coupé en rondelles et cuisiné au four 15min. Un régale. Servi avec une poêlée de courgettes, onions et poivrons. Puis Une tomate à la provençale. Le tout assaisonné d'une sauce à l'avocat. Allez je file, Je retourne au bureau. Bon appétit les amis !

≫ For dinner I LOVE to have buddha bowls with lots of fresh veggies and oven baked potatoes. It's probably my favorite go to dinner ☺ I had it with a homemade lemon tahini dressing which made the whole bowl even tastier 🤤 What do you like for dinner? Do you like these kind of buddha bowls too? 😏
≫ I also want to talk for a moment about the ridiculous ban we have from today on in Belgium in regards to using "unnecessary" water. If you wash your car, fill your swimming pool or "spill" drinking water, you basically risk a fine now. Honestly, this is completely outrageous. The mass media is full of tips on how to reduce your water consumption, yet NOTHING is said about the amount of water used in the meat industry 😤 Worldwide an average of over 15.000(!) liter of water is used to produce just 1 kg of beef, but yeah let's all save our drinking water and get a fine if we shower, right? 😡 I don't own a car or a swimming pool, so I'm probably out of risk here, but seriously, this shit is getting me so angry. Water shortage wouldn't be a problem ANYWHERE in the world if we just used it solely for fruits and vegetables to feed humans. If you are not vegan, please consider eating more plant based foods if you really want to reduce your water consumption 💦 Do your own research, watch documentaries like @cowspiracy and don't rely solely on what the government and the mass media tells you... The truth is out there and I genuinely hope everyone will start seeing that soon too. It's never too late to start making positive changes 🌿
