Dinner tonight was the kiddos new fav - wholemeal pasta with tuna, parsley, olives, lemon zest, olive oil and a dukkah-inspired crumb (toasted breadcrumbs, sesame seeds, fennel & thyme). Sounds fancy af but seriously so easy, cheap and made with ingredients you probably have lying around. I'm really not into weeknight cooking so this sort of meal is perfect for those nights when you cbf, have nothing in the fridge but feel more deserving than just toast. 💁

Food fear for me is a really big deal - especially when I’m currently having the biggest acne blow out of my life. All I wonder is “omg, is it the gluten causing this?” - when maybe it is and maybe it isn’t. .

But I have to believe that my very heightened levels of stress as I deal with my Orthorexic recovery (primarily revolving around gluten) has a bigger part to play. Increased stress ➡️ Increased cortisol ➡️ Acne breakouts

I’m going to a. wake up a few min earlier tomorrow and try to meditate some using @headspace - has anyone else used this before? Thoughts? Any other better methods you’ve tried? .

And b. keep my face clean and be more regular with retin-A to keep things moving along🤞🏼. Wish me luck!

Pumpkin & PB Amaranth Porridge 🎃💗 the best part was sharing it with the person holding it!! My grandma😍 I had the honor of spending some time together the last days (she finally decided to take a flight and visit!) I learn so many natural remedies 🤗....her serenity and the way she observes the world is so incredible ( privilege of not having a smart phone or not giving a f*** about social media...obviously🙃) feeling I should reconnect with that energy of not doing anything and just being ...😍 ( I'm always doing 128480 things!!) I love her to dead and wish I get to live a happy and beautiful life just like hers...but liking kombucha (😂 she tried it and her face was hilarious) I wish she can visit again soon 🙏💗 recipe in comments!----------------------------------------------------Amaranto Cremoso de calabaza y Mantequilla de Mani 🎃💗 la mejor parte fue el poderlo compartir con estas manos que sostienen el bowl! Mi abuelita😍 tuve el honor de compartir unos días con ella (finalmente se decidió a tomar un avión para visitarnos!) Aprendí muchos remedios caseros (yupii) y su serenidad y forma de ver el mundo es tan increíble 😍 (privilegio de no tener celular o que no te importe un carajo las redes obviamente 🙃) así que me quede  sintiendo que debería tratar de reconetarme un poco con esa energía de no hacer sino sólo ser (siempre estoy haciendo mil cosas!!) Bonsoir Insta Fam! Happy Wednesday evening! Tonight, I opted for something vibrant, colourful & quite easy to make. Ever heard of “Protein Power Bowls”🤔?? I made a vegan 🌱 version tonight and it took me about 15 mins from start to finish because I precooked my Farro, beans, chickpeas & steamed some carrots before leaving the house this morning (⏰🙌🏽😍)
So, ingredients used included:
- 2 cups of Farro,
-1 Big red onion, 2 garlic cloves minced,
-1/3 cup of sundried tomatoes,
-1/4 cup of Kale,
-1 cup of red kidney beans, 1 cup of white kidney beans, 2 cups of chickpeas ( Did I mention “Protein Power Bowl anywhere?🤔😉😊💪🏾)
-1/4 cup of capers,
-2 carrots,
- 1/3 cup of mushrooms,
- 1 tsp of dill,
-4 tbsp of Olive oil,
-4 tbsp of balsamic vinegar,
-1 tsp of buckwheat honey,
-Salt & pepper to taste,
- some nutritional yeast (optional)
As for the directions, I only had to lightly sauté my onions, garlic, mushrooms, carrots & beans for a few minutes...👉🏽added some balsamic vinegar,honey, Farro,dill, Kale, salt & pepper👉🏽Topped my Farro bowl with capers, sundried tomatoes & nutritional yeast ( I like that “cheesy effect😍😉) Et Voilà! Le dîner est servi!!💁🏾🍲👩🏾‍🍳...Rapide (Fast) & Délicieux!!😋😋

I am exhausted from this work week already and counting down the hours until the weekend! Comfort food was calling my name tonight, so I whipped up another @thedailydoseofpepper recipe! Italian Sloppy Joes 😍 This is my first time making these, and WOW! This sauce I want to put on pasta now too, it’s so so good! Another Winner in our house and will be added to the rotation! 5 sp per piece (I used Sara Lee 45 cal bread) and a small simple salad (2) 12 sp total •••••••••••••••••••••••••••••••••••••••••••••••••

Decided to get creative with leftovers tonight and came up with these Bacon Spaghetti Squash Fritters 🙌 I mixed leftover squash (after squeezing excess water out) with crispy bacon pieces, almond flour, 2 eggs, fresh sage, thyme, red pepper flakes, onion, garlic, s+p and fried them in @primalkitchenfoods avocado oil for 4 mins each side, then topped with some lactose free sour cream.  Will definitely be making these again with any leftover veggies I have! So good 🍳

So glad it's the middle of the week! I skipped my workout today, but I'm not really sweating it. Sometimes it's impossible to fit everything in one day. I'm sure you guys can relate! 
Ready to enjoy this salmon with my favorite booch!!
I like seasoning my salmon with lemon pepper seasoning from @traderjoes, spraying it with some @chosenfoods olive oil, & adding a squeeze of fresh lemon juice over the top of it & baking it for about 15-20 mins at 375. 
Veggies! Same goes for veggies, but I just leave them in a little longer for some crispiness.

I don’t usually mind the rain, but this is more like buckets of water dumping from the sky 😖 My salad consists of greens, quinoa, roasted chickpeas, peas, and roasted zucchini and squash. A honey crisp apple on the side 🙂 All thrown together in 2 minutes from my meal prep! Happy hump dayyyy 🙌🏻

hey y'all long time no see!!! i actually have a GOOD excuse as to why i haven't been posting now - not that i've been "too busy" (aka lazy af) but my phone was so broken i couldn't take pictures OR even access instagram (or vsco to edit the pics pre gram)😵it was basically the worst 5ish days of my life but i got a new phone and now i'm back. also tminus one week till i'm back in my kitchen and get to make all the yummy smoothie bowls and dinners like this🤑deff copping some sweet potato fries n salmon asap when i'm back in the dale👉🏻kale and red cabbage sautéed in coconut oil + steamed broccoli + 2 types of kraut (all abt that gut health) + hella baked sweet 🥔 fries + phat piece of wild caught salmon. hope everyone's wednesday was as gr8 as mine when i got the email my phone was waiting in the mail center😉😘

Please tell me I'm not the only one this obsessed with tahini !!! 🤷🏻‍♀️❤️ had the realization today that I could literally eat it with anything (and I do)! From sweet (my fav snack of sliced apples topped with cinnamon and tahini) to savory in my fav salad dressings, the love is real 🙈

Breakfast Oats:
½ cup rolled oats
½ cup almond milk
½ cup water (You can add more water/almond milk as needed to thin it out)
½ or whole 🍌 (I happened to only have frozen bananas on hand this morning and was pleased to find that it seemed to make the oats creamier once mixed through. Is this a thing? Haha)
1-2 tbsp chia seeds
Optional:
½ tsp coconut oil
1 tsp maple syrup
Handful of walnuts
To taste: Cinnamon, nutmeg, turmeric (the reason this oatmeal is slightly orange 😂), bit of black pepper (for turmeric absorption)
Topped with that tahini drizzle (not optional! Jk😋) 🌞🍁🍂

cookies were the craving, so whipped these bites of heaven up the other night 😍 they are peanut butter chocolate chip oatmeal cookies and the recipe is from @restoring_radiance so go check out her page 👉🏼 seriously guys, these cookies were so easy to make and they are so incredibly good and made with clean ingredients 🍪 my whole family has loved them and they are literally so picky. any time I say clean ingredients to them they immediately think they will taste like cardboard, but this was definitely not the case! make them and they won't be in your house for long!

There are things that give you energy, strength, joy & there are things that suck the life out of you. How much time are you spending in each category? 🤷🏼‍♀️
As I’ve peeled back the layers of my life these past few years, I’ve realized I’ve devoted far too much energy to the latter. Fear of failure (aka shame/poverty). “Earning” external validation & approval. Misguided attempts to be thinner, more successful, more accomplished, more loved. To say that pursuing these things sucked the life out of me is an understatement. 🙅🏼
The collision of health issues, family crisis & career stress pushed me to a breaking point that forced me to realize the value of spending more time standing in our power, doing things that bring us joy, fulfillment, and a sense of purpose. There is so much we can’t control in our lives, but we can control what we devote our energy to. Shifting gears to joy, fulfillment, purpose- things w/intangible benefits that can’t be quantified- does not come naturally or easy for many of us. But doing so is a form of self love, self acceptance and a celebration of who you are at your core and therefore worth more than almost anything. 😊
One of my biggest hopes for all my girls and women out there is that they don’t let their mental & physical health deteriorate before they see the value in 👆🏻. What if we all taught one young girl the importance of investing time & energy in the things that give us health, happiness, strength, power, joy, wisdom, fulfillment, purpose? What if we SHOWED them how good life can be if we stop feeding the darkness and step into the light? led by example? That’s what I aspire to do. Long way to go, but werkin on it. Today I had an event that I attended for work (a Realtor Fashion Show 💃🏻) So many temptations of dessert, drinks etc. I had a big plate of mixed greens with feta, cranberries, and light vinaigrette, steamed broccoli and carrots, roasted potatoes, some herb chicken, and a small piece of prime rib. Didn’t take the roll with butter! Counting as 14 sp. and I had TWO bites of cheesecake (4?) Today marks a total of 8 years spent with one of the best humans I’ve ever known. We’d been friends for a few months, so when he asked me to go see a movie with him, I honestly wasn’t sure if it was a date or not. To be safe, I told myself it was just a couple of friends hanging out, going to see a movie together NBD, and I went to dinner with a few friends beforehand. So when he called during dinner and sounded super surprised that I was eating with friends, it was because he’d actually planned on taking me to dinner, but forgot to mention it to me… 🤦🏻‍♀️ Thankfully, our communication skills have drastically improved since then. 😂🙏🏼

Today marks a total of 8 years spent with one of the best humans I’ve ever known. We’d been friends for a few months, so when he asked me to go see a movie with him, I honestly wasn’t sure if it was a date or not. To be safe, I told myself it was just a couple of friends hanging out, going to see a movie together NBD, and I went to dinner with a few friends beforehand. This smoky vegan chili amped with a homemade butternut purée, chilis in adobo and just a bit of chocolate is honestly just getting better and better. The fluff hominy hiding among the beans is also such a discovery to me. A highly enjoyable leftover lunch for sure. .

That color though 👆🏻 nailed it! I love this fall ginger turmeric combo with some @siggisdairy & @bumblerootfoods hydration mix. I just discovered these mixes and am a big fan 👍🏻. They're a great alternative to sugary sports drinks or a good way to add some flavor to your water.

FAT & GREENZ🌿 ?!? You're probably wondering why fat and vegetables are a great combo. Well, I'm about to BLOW your mind. You actually get better absorption of most VITAMINS when you pair your veggies with GOOD FAT. (Olive oil, avocado oil etc.) So stop fearing fat, you NEED it. Upgrade your veggies and add some olive oil to top off a healthy dish. (Remember to never cook with olive oil because it's delicate and will become carcinogenic when heated at high temps!)
