And I have done my best to answer and tell everyone that yes, the recipe is coming soon soon soon! It’s so heart-warming that the photo has resonated so strongly with you guys and that you have been sharing it and wanna try them out.  Vanilla Crepes with Berry Coconut Cream filling
✨
Makes about 5 crepes
✨
Crepes:
1 cup oat flour (or rolled oats blended to flour)
5 tbsp potato starch
2 tbsp coconut sugar
tiny pinch of sea salt
1 tsp vanilla extract
1 ¼ cup sparkly water
2 tbsp coconut oil, melted

Preheat the skillet. Mix the dry ingredients in a bowl. Add vanilla, sparkly water and oil. Stir until even. Add a drop of coconut oil on the skillet and pour on some dough so that you get a thin round crepe. Cook until the surface looks dry, flip with a thin spatula and cook the other side. Prepare the rest of the crepes. Set aside & prepare the filling.

Berry Coconut Whipped Cream:
1 can full fat coconut milk, kept in a fridge
2 tbsp maple syrup
½ tsp vanilla powder
2 tsp blueberry powder

Open the coconut milk can and scoop out the white thick paste into a bowl . Add the remaining ingredients and whip with a mixer until fluffy. If the mixture becomes too liquid, place it into a freezer for 10 min. ...(✨Rest of the recipe in the comments!✨)

Roasted Brussels sprouts with @chosenfoods avocado oil, nutritional yeast, turmeric, pepper, garlic and cayenne. Raw pistachio and lemon “cheesecake” @beyondthebowl_byriri 💚
Recipe⠀
Used a 26 cm (10 inch) springform cake tin⠀
INGREDIENTS⠀
For the base:⠀
1/2 cup raw pistachio⠀
1/2 cup almonds⠀
12 large pitted medjool dates, about 250 g (if they're not very soft, soak them in hot water for 10 min and discard water before using)⠀
some coconut flour (to prevent the base from sticking to the pan, alternatively use a baking sheet)⠀
For the filling:⠀
1 1/2 cups raw cashews (soaked overnight, or for 30min in hot boiling water, then drained)⠀
1 can full fat coconut milk, refrigerated overnight* (read important instruction below!)⠀
Zest of 1 lemon⠀
1/3 cup lemon juice (1 large lemon)⠀
1/3 cup coconut oil⠀
3 tbsp tbsp honey ( or 4 tbsp if you have a sweet tooth)⠀
2 tbsp orange blossom water⠀
2 tbsp rose water⠀
For garnish:⠀
2 tbsp crushed pistachio⠀
some dried rose petals⠀ ⠀
PREPARATION⠀
To make the base:⠀
1. Place all the base ingredients in a food processor and blend until the mixture sticks together when you squeeze it between your fingers.⠀
2. Get your cake pan and sprinkle coconut flour at the bottom (alternatively, use a baking sheet). Now place the base mixture in the pan and press it down into the pan evenly to form the crust and set aside.⠀
To make the filling:⠀
3. Add all filling ingredients to the food processor and blend until silky smooth. When using the coconut milk, make sure to only use the solid part, so scooping the cream off the top (*that's why refrigerating the can is essential as this will allow the solid creamy part to separate from the water, don't discard the water as you can use it in another smoothie recipe).⠀
4. Pour filling mixture evenly on top of the base then garnish with pistachio and rose petals.⠀
5. Place in the freezer for 5-6 hours. Take them out 10 min before serving.⠀

👩🏼‍🍳 BEET HUMMUS👩🏼‍🍳 Tried something new & it is a huge success. Beet powder in my beet hummus instead of whole beets. I was out of beets & I use beet powder in my smoothies sometimes, so I thought I’d try it in hummus. Here’s the recipe I used from @sunfood but I changed a couple of things based on what I had on hand: 
Ingredients:
2 Tbsp Beet Powder ( or 2 roasted & peeled beets)
1 can of chickpeas, rinsed (💁🏼‍♀️I used cannelini beans bc I was out of chickpeas)
Zest & juice of 1 large lemon
2 cloves of garlic
2 Tbsp Tahini
1/3 Cup Extra Virgin Olive Oil (💁🏼‍♀️I use avocado oil)
💁🏼‍♀️I also threw in a handful of walnuts just because 
Salt and Pepper to taste
Fresh herbs (optional)
Directions:

We use them for both sweet and savory snacks or meals! We’ve loaded em up with chipotle @bitchinsauce , chili marinated tempeh 🌶, cheesy scrambled pasture raised eggs by @ricksproduce and @so_delicious mozzarella cheese, avocado 🥑 , salsa, micro greens, roasted local sweet potatoes from @cookbookmarket and a simple salad of spinach, arugula, extra virgin olive oil, lemon 🍋 salt and pepper.

Topped it off with some EVOO, a pinch of truffle salt, and dried oregano. Too easy, too delicious, and too good for you not to make your own version!! 😁😁😁 Pop in the oven at 400 degrees and bake for 8 minutes. 🙌🏼 #Taysteebites

It’s beginning to look a lot like... PJ’s all day & lazy christmas picnics at home. 💫 Are you in a Christmas mood already? I’ve been eating christmas food for over couple of weeks now, we’ll see if I can still continue one more week. 😜 Haha! Had today a christmassy brekkie picnic on my new favorite place in our home, a big rose velvet pouf by @tinekhome from the ever so lovely @nougathelsinki boutique that I’m collaborating with. The place where I get most of my dishes, small home items and jewellery from in Helsinki. If the pouf would be just a little bit bigger I would probably also sleep on it. Like a cat. 🐱purrrr. Oh, and gingerbread spices work like a charm with my pancakes. You should try them! Wishing you you kitties a cozy Sunday! Stay warm. #vanelja #nougathelsinki #collab #tinek

VANELJA'S GINGERBERAD PANCAKES:

Makes about 7 small pancakes
✨ 
1 ripe banana
½ cup / 1,5 dl oat milk (or for example almond milk)
½ cup rolled oats
1 tsp baking powder
1,5 tsp gingerbread spice mix
1 tsp vanilla extract
✨ 
Place all ingredients into a blender and blend until smooth. Let the dough thicken for about 20 minutes. Heat a frying pan over medium heat. Drop about 2 spoonfuls of the batter onto the pan and cook until the surface looks almost dry. That should take about 2 minutes. Flip, and cook until nicely browned on the other side. Repeat with the remaining batter. If the pancakes remain too pale, lift the heat up a bit or if they get too brown, lower the heat.
