#Kohlrabi is a biennial #vegetable , and is a low, stout cultivar of #cabbage . Kohlrabi can be eaten #raw as well as #cooked . Edible preparations are made with both the #stem and the #leaves .
Kohlrabi is so highly valued in #countries and #cuisines around the #world not only for its diversity in cooking applications, but also because it is full of nutrients and minerals like copper, potassium, manganese, iron, and calcium, as well as vitamins, such as vitamin C, B-complex vitamins, vitamin A, and vitamin K. 🍃
1- Kohlrabi is a great source of dietary fiber that can seriously improve your digestive health.
2- Kohlrabi is the perfect diet vegetable, because it is low in calories, high in fiber, and is packed with beneficial nutrition. Fiber makes us feel full, so even if the volume of food consumed isn’t that great 👍
3- The high potassium content in kohlrabi makes it a great addition to your diet to keep alert, energetic, and in great shape!
4- The significant levels of iron found in kohlrabi go hand-in-hand with the potassium content, as iron helps to increase the RBC in the body, which is essential to prevent anemia (iron deficiency), which is characterized by weakness, fatigue, headaches, stomach disorders, disorientation, and general immune system failure. The calcium found in kohlrabi also improves the uptake of iron by the body, so kohlrabi is an all-around booster for both the immune and cardiovascular systems.
5- As we get older, our bones inevitably weaken, but one of the best ways to avoid or significantly slow down that process is by eating mineral-rich food, which includes vegetables like kohlrabi, with high manganese, iron, and calcium contents.
6- Kohlrabi is one of those amazing vegetables that seems blessed with high levels of phytochemicals, particularly glucosinolates, which are considered some of the most important antioxidant compounds for the prevention of cancer, including breast and prostate cancer.
Sautéed shrimp & kielbasa w/ garlic mashed potatoes & brussel sprout salad. .
Soak wooden skewers in water for 5 mins to prevent catching fire. Slice kielbasa into 1/2 inch pieces & slide onto skewer. Most kielbasa is precooked & seasoned beautifully, so it merely needs a nice sear. .
Peel & devein shrimp. Toss in olive oil, Old Bay & crushed garlic, slide onto skewer. Place all skewers on hot, oiled skillet for 2-3 mins per side (depending on shrimp thickness). .
Salad: Shred 2 carrots, 4 cups brussel sprouts & 1/4 head cabbage. The dressing is a Champagne vinaigrette from The Lemonade Cookbook.
-1 large egg yolk.
-1 tsp Dijon mustard.
-1 tsp honey or agave nectar.
-2 tbsp champagne vinegar.
-1/2 tsp coarse salt.
-1/4 tsp pepper.
-3/4 cup canola oil.
-1/2 minced shallot.
Blend all ingredients together, drizzling in oil until emulsified; mix in shallots last. Toss salad & let sit for 1 hour to soften sprouts/cabbage. .
Wash, peel & rinse 2 russet potatoes. Chop & boil for 15 minutes, when fork tender drain water. -1/2 cup milk.
-1/2 tbsp salt.
-1 tsp pepper.
-1 tbsp crushed garlic.
-1 tsp onion powder.
-4 tbsp butter. -1/2 cup Parmigiana-Reggiano (optional).
Mix in all ingredients until smooth. Increase milk for thinner potatoes. Most potatoes are very bland so don’t be scared to add lots of salt. .
