Traditional Thai Organic farmers learn farming from their ancestors who used to grow for their own subsistence. They follow the basic rules of morality and respect to natural ways. Along with the rice fields that are mostly for commercial purpose nowadays, the farmers grow other plants and raise cows and chickens as part of their ecosystem in a traditionally self-sufficient agriculture.
All “Kaipira” chickens and ducks are fed with organic feedings, mostly from around the farm. The main ingredients are corn, rice bran, fish meal & bone meal plus local vegetables. Feeding them with Thai herbs is also very important to prevent flu and other pathogens that would spread among them. The livestock is kept under a limited population of about 50 to no more than 100 per farm to avoid overpopulation and to guarantee they each have plenty of nutrition, space to run around and can enjoy a happier and healthier life at the farm.
Yasothorn is a remote province in the North Eastern part of Thailand, about 540km from Bangkok and a 7 hour drive. Despite the long distance and the cost of logistics, Fresco Organico wants to promote the local produce for it’s high quality and nutritious value. We also trust the farmers’ commitment to complying to the highest standards demanded by the organic methods.
Fresco Organico believes the high quality justifies the high costs and that Kaipira eggs are for consumers who have higher perceptions and demand for healthier quality food. We are also consumers who respect the nature and care about the environment, the well-being of the farmers and the animals.

This may not look like much but holyyyyyy flavor. Just look at that yolk! This breakfast for dinner is 100% a new staple in this house || leftover Rosemary roasted potatoes sautéed w/ diced red peppers, smoked paprika and garlic with two crispy fried eggs||
Delish and simple Spanish tortilla.
Our Sunday brunch meal.
5 eggs, whisk
I 🥔 potato peel n dice
I medium onion dice
2-4 Tbs olive oil
Salt n pepper
Parsley for garnish
Cook the diced potato n onions till the potato is cooked well. Add salt n pepper. Cover to let it cook for a few minutes.
I add the eggs to the cooked onions n potato in the non stick pan. Cook over low heat moving the eggs around till it isn't runny.
I cover the pan for a few minutes. Flip the content slowly into another flat dish then slide it back into the pan. Let it cook for another 3 minutes or till golden brown, do not cover the pan.
Cut, garnish n serve. I like to serve it with sliced tomatoes drizzled with olive oil, salt n pepper, a slice of feta cheese, oilves, and a slice of sourdough bread. Remember, you can add any veggie you want instead of a potato. I like to add green peppers.
