Being officially diagnosed with celiac and candida was just that...a diagnosis. I already knew my body wasn't operating properly. I just didn't know what was wrong and doctors would just tell me that I had IBS and to take medication. I knew that wasn't the case. There was more! Plus, I've never been the kind to just use a bandaid solution. I want to know what the problem is and create a REAL solution! The correct solution. So while I always knew it was weird to have "stomach issues" I also sorta accepted it. For as long as I can remember my life has revolved around knowing when I was going to eat and how near the cleanest restroom was. Because eating and running to use the toilet 🚽 went hand in hand (TMI😬) . In fact it has long been a joke between me and my sister that we know where all the clean restrooms are pretty much anywhere we have lived or traveled. We got home from a #mountain bike race in #austin a few weeks ago and were starving. I'd run out of healthy snacksin the car 😱 and we were low on groceries. I whipped us up this quick salad to snack on while I made dinner (forgot to photograph dinner). It was arugula, sliced mini bell peppers, @traderjoes freeze dried blueberries, shaved parm cheese, and dressing was olive oil and salt and pepper.  Super light but took care of the hunger pangs and got in a good serving of veggies 🙌🏼 plus side, the boy liked it too! #travel #mountainbike #celiac #celiacdisease #glutenfree #candidadiet #candida

A few weeks ago we traveled to #NewOrleans for Halloween. I was quite a bit worried about what I would eat considering it's all still new to me! I allowed myself some room with the strict candida diet but stuck to gluten free. Unfortunately, I am not a big seafood 🍤eater so I had to stick to beans and steaks and veggies🥕🥒🍅. However, we did find this great place called Meals From The Heart in the #frenchquarter that I ended up eating at THREE times! This is the grilled veggies and Caribbean rice dish with gluten free bread and black bean patty. It was so fresh and tasty. My boyfriend ended up eating a few of their other dishes and finished my left overs! I highly suggest this place for quick yummy meals in #NOLA. Heute früh gab es zuckerfreie Buchweizenpancakes :) getoppt mit etwas Granatapfel,  Mandelmus und Kokos! Vollkornbuchweizen gehört zu den komplexen Kohlenhydraten die unser Körper besser und schneller aufspalten kann als der Pilz! Also Guten Appetit. Für das Rezept gerne eine dm schreiben :)

Most of us come from a home where meat was the main and veggies were the sides.  For many, the sides were usually quite uninteresting because all the love went into preparing the main.

Baby spinach with a warm bacon vinaigrette dressing, cumin-coriander-nutmeg roasted butternut squash, sliced radishes, red onion, cilantro, serrano peppers (hot AF), cilantro, all on a smear of lemon ricotta and crumbled goat cheese, and some toasted pecans and hemp seeds that didn't make it into the picture. So filling. The husband said, "this feels like adult food". This is the only time adulting doesn't suck. •

Soup for Lunch: Roasted Broccoli:

Roast broccoli in the oven with olive oil, lemon, and salt. Add roasted broccoli and 1 mason jar of beef stock to a pot and heat. When broccoli is soft, put broccoli and stock in a blender and blend. Serve!

Soup for Dinner: Beef & Carrot-Bok Choy-Onion:

Chop Bok Choy, onion, carrot and put in pot with 1 mason jar of beef stock and 1/2 cup chopped meat from the soup bones. Heat with salt and white pepper and serve. This was a delicious combo. I was so excited to eat I forgot to get a photo! 🤦🏻‍♀️

Chocolate Banana Maple Vegan Paleo Protein Muffins 🍫🍌

Celebrating my shorter work day with a delicious kitchen experiment. Sometimes I just throw a bunch of random things together and hope and works...and wow this one came out AMAZING 🤤

➡️Recipe .
✖️1 can of white beans .
✖️1/4c of @simplemills #paleo chocolate cake and muffin almond flour mix .
✖️2T of @traderjoes raw creamy almond butter .
✖️1 scoop of @highperformancenutrition vegan banana maple French toast protein powder (use “abv” for a discount)
✖️1/3c cashew milk .
✖️1tsp baking powder and 1/2tsp baking soda .
👉🏻Add everything to a food processor, top with @enjoylifefoods #vegan chocolate chips, and bake for 15 minutes at 350. (Let these cool for at least 20-30min or they will be too gooey!) .
🔥Macros/muffin: 105cal 13C/3F/8P sugar: 1.9g (recipe makes 8)

Chocolate Banana Maple Vegan Paleo Protein Muffins 🍫🍌 . Celebrating my shorter work day with a delicious kitchen experiment. Sometimes I just throw a bunch of random things together and hope and works...and wow this one came out AMAZING 🤤 . ➡️Recipe . ✖️1 can of white beans . ✖️1/4c of @simplemills #paleo  chocolate cake and muffin almond flour mix . ✖️2T of @traderjoes raw creamy almond butter . ✖️1 scoop of @highperformancenutrition vegan banana maple French toast protein powder (use “abv” for a discount) ✖️1/3c cashew milk . ✖️1tsp baking powder and 1/2tsp baking soda . 👉🏻Add everything to a food processor, top with @enjoylifefoods #vegan  chocolate chips, and bake for 15 minutes at 350. The last 24 hours have been crazy. 😳I had a doctor appointment yesterday afternoon, which concluded in my primary care regular old conventional doctor wanting to do all the tests I've been wanting to do for MONTHS. It was a huge praise! The more amazing thing is that I was able to do ALL. OF. THEM. this morning in like less than 2 hours. 🙌🏻 I don't have any results yet, but hopefully once they come back in a few days we will have some answers or at least be getting closer to some answers. In the meantime I'm super grateful! 💗✨And hooray for more blood work! 🙈👊🏻

U kombinaciji sa speltom i drugim zrnevljem dobijamo fantastično hrskave krekere - dozvoljene i zasite 👏🏻

Recept: -130g speltinog brašna -100g kinoe u zrnu -50g chia semenki -50g lanenih semenki -2 kašike maslinovog ulja -pola kašičice soli -100ml vode

Kinou isprati i skuvati (na 100g kinoe duplo više vode). Ocediti i ostaviti sa strane da se prohladi. Laneno seme samleti. U većoj posudi izmešati suve sastojke: speltino brašno, lan, chia semenke i so. Dodati vodu i ulje i dobro promešati. Na kraju dodati kinou. 
Na pleh za pečenje staviti pek papir i masu razvući kašikom na debljinu od oko 4-5 mm, iceći na željeni oblik. 
Peći u zagrejanoj rerni na 180ºC nekih 25-30 minuta.

I usually avoid bananas because of my candida, but green unripe bananas contain less sugar and more fiber than ripe ones. Therefore it should be ok to have one every now and then I think. I wouldn't want to miss out on those lovely vitamins!🍌💕

Bring to a boil, cover & simmer on a very low heat for 30mins.
Let cool before straining though a muslin cloth. 
Will keep for around a week in the fridge, stored in coloured glass spray bottles.
Add to your bath soak or use as a facial mist & toner. Especially soothing on cotton pads for tired eyes.

Coconut Anti-Candida Cookies - Yum! I was trying to make muffins and it turned into these. Sugar and grain free, super simple. Will do a little more experimenting... so far:
- 1 cup coconut flour - 1 tsp baking soda - 1/8 tsp salt - 4 eggs - 2 tsp vanilla - 1/4 cup melted coconut oil - 3/4 cup coconut milk (1 mini can) * arroy-D brand has no additives! - 1-2 tsp cinnamon - 1/4 cup coconut flakes (optional)
 Roll cookies into small balls, and press down onto cookie sheet (they don’t spread at all). Bake at 350 for 7-9 minutes. Let cool on the pan for 3 minutes once out of oven. Optionally, ice cookies with coconut butter or homemade jam! * makes about 35 cookies. Consistency is almost like a biscuit.

I’ve been couch bound on week 2 post stems. I’m weak and fatigue and only have a 2 good hours of energy a day. It’s recommended to eat vegan and AIP for the first 100 days post stems, and it’s been tough trying to figure out what works without symptoms. A blended diet is also recommended, so doing what I can to be creative while I try to keep myself low key busy. I’ve been making lots of great smoothies but too tired to photograph and post. But had to share this one! It’s SO good.

🍁 1/4 c Coconut Milk
🍁 1/4-1/3 c Carrot juice (I juiced my own!)
🍁 2 tbl pumpkin purée
🍁 Piece of ginger
🍁 Large sprinkle of cinnamon and cloves
🍁 2 drops of stevia, or you can add maple syrup for better flavor
🍁 Frozen banana
🍁 Optional: Pecans, FODMAP serving
🍁 Optional: 2 cubes of cooked sweet potato, better frozen! You can also omit banana but I recommend freezing the pumpkin to give it a creamy texture
