I tend to be a creature of habit. You? Hard boiled eggs are a snack I use to grab and go on my low carb days. Eggs are so nutritious, and I try to have one every day. Especially here in the northeast they are one of the only foods that naturally contain vitamin D. They are packed full of protein, healthy fat, and 9 essential amino acids. I love my eggs. Especially sprinkled with “everything bagel seasoning”.

Schiacciare la banana con una forchetta, aggiungere la farina di riso, la farina di mandorle, l'albume, l'aroma di arancia e mandorla, il pizzico di idrolitina o il lievito e mescolare bene. Versare ¾ dell'impasto in un padellino antiaderente piccolo già caldo, coprire con il coperchio e cuocere a fuoco basso per 10 minuti circa, nel frattempo aggiungere al rimanente impasto il cacao in polvere e la farina di semi di lino. Mescolare bene, versare il composto in un altro padellino antiaderente piccolo già caldo e cuocere a fuoco basso mescolando con un cucchiaio di legno, finché è cotto e tutto sbriciolato. This morning, under my Christmas tree 🎄, I have this delicious gift waiting for me: a fluffy rice and banana pancake with a scrambled chocolate cake and two 🎄 🎄 on top. 200 ml of egg whites
30 gr of rice flour
5 gr of almonds flour
5 gr of flaxseeds flour
5 gr of low fat cocoa powder
80 gr of riped banana
1 pinch of idrolitina or 1 tea spoon of baking powder
Orange aroma few drops
Almonds aroma few drops
Mash the banana with the rice flour, the almonds flour, then add the egg whites, the orange and almonds aroma, the pinch of idrolitina or baking powder and mix well. Pour ¾ of the mixture in a preheated nonstick little pan, cover with a lid and cook for about 10 minutes on low heat. In the meantime add the cocoa powder and the flaxseed flour to the remaining dough, mix well again, pour the mixture in another preheated little nonstick pan and cook stirring with a wooden spoon. Air Fryer experience thus far: INCREDIBLE! 🙌🏻 Chickpea Chicken Nuggets + sweet potato fries cooked WITHOUT oil - yup crazy! And they were delicious 😋
🎄So if you were thinking of adding this baby to your Christmas list or if you’re looking for a present for the foodie in your life, I say go for the air fryer and here’s why: quick cooking, easy cleanup (huge for me!), & great taste/texture turnout. I have a @cozynaworld 3.2L!
🍠For the sweet potato fries, I used @alexiafoods frozen fries and put them in the Air Fryer at almost 400' for about 12 minutes. Turned out nice ‘n crispy! 🍗For the chickpea chicken nuggets, I based my recipe on @jamela_bypink‘s copycat Chick-fil-A recipe, except used @watuseefoods chickpea crumbs instead of flour & coconut sugar instead of powdered sugar 👊🏻 ah so impressed by this air fryer thus far!
Testing "carb-up" on the keto diet. Woke up with 1.1 mmol/L blood keytone, and 4.1 mmol/L glucose. Steamed eggs/ avocado for breakfast, 3 slices of low carb/high protein bread (net carbs 21 grams), bacon and roasted brussel sprouts for lunch, keto dark chocolates and decaf latte for snack. Then jogged for 6 miles (with some elevation on the trails) at an average 15 minute mile. Then blood keystone still registered 1.0 mmol/L , glucose at 3.8 mmol/L. Didn't feel tired after the jog either. Yes to carb-up! Legs didn't feel as tired during the jog and could definitely run faster. Yes to fat fueled workout too! Good to be fat adapted :-)

Here is my recipe for the stuffed pepper soup. It’s so simple and delicious! Enjoy!
Stuffed Pepper Soup
1.5lbs of lean ground turkey
3 red peppers chopped
2 green peppers chopped
1.5 onions chopped
2 cans of chicken broth
2 cans of diced tomatoes
2 cans of tomato sauce
2 cans of rinsed black beans
Salt and pepper
Cook onion, peppers, and ground turkey in a skillet. Drain any fat. In a soup pot, put 2 cans chicken broth, 2 cans diced tomatoes, 2 jars tomato sauce, 2 cans of rinsed black beans, and add turkey and pepper mixture. Cook on medium for about 20 minutes or until warm.
