I had a hankering for naan since like 4 years ago. 😂 I came upon this recipe today and had to try it. I used milk and oil to replace the coconut milk as I didn't have any and didn't feel like going to the store. It's not like the real thing but it served well enough. My tummy gets upset with anything I eat still so I decided to eat whatever I want. I ended up in the ER last night, I will spare you the details. I have been fighting a glutening like none other for over a week, I've basically been in bed for a week. I've slept so much and can sleep more. But, I believe I will get better. I had a ready to eat palak paneer and it was perfect for my first attempt at gluten free naan. I only ate half, I have more naan for tomorrow. Another part of having #celiac disease that stresses me out is going to an event when I have no idea what they are going to serve. Usually I call ahead and ask if they have GF options, so I don't have to call attention to myself, but this time it was a "floating dinner" event in #durham , so I just decided to wing it. Luckily, I had the opportunity to speak to the chef and he went over everything that was safe for me to eat! It was all delicious!

We celebrated the first day of fall with a @traderjoes #glutenfree pumpkin haul. We've already finished a box of the crackers, started our yearly stock up of pancake mix, plan on making some nachos for a Friday night treat with the tortilla chips, and am seriously mad at myself for not buying the pumpkin cream cheese! Loving all the options at Trader Joe's right now!

Baking with Millet Flour
• Easily digestible grain flour
• Mild, sweet, nutty taste that works in savoury and sweet recipes
• Adds delicate, cake-like crumb to baked goods
• Helps build structure in dough
• High calcium content, 10% protein
• As part of a Gluten free flour mix
• Quick breads and muffins
• Sprinkling on bread before baking
• More than 15-20% decreases bread volume and results in coarse, mealy texture
• More than 20% millet leaves a starchy taste
Pros and Cons of Baking with Sorghum Flour
• Mild, sweet flavour and a smooth texture
• Works in savoury and sweet recipes
• Helps bind moisture and increase CO2 bubbles formed during bread making
• Rich in iron and fiber, 12% protein
• Sold as sorghum flour or sweet, white sorghum flour
• Breads, quick breads and muffins
• As part of a gluten free flour blend • Can be used as a substitute for oat flour
• Can be used to make beer (which I have never done…but just so you know)
• More than 30% sorghum flour causes a slightly sour taste and dry mouthfeel
• Should be stored in fridge or freezer
My favorite comfort food! It's so rare to find truly gluten free fries in a dedicated fryer... but sweet potato fries are even more rare!!! Plus chicken tenders... because I eat this stuff like twice a year... with garlic aioli ;)
Fun tip. My husband and I don't have a microwave so I've had to come up with creative ways to reheat left overs.
I re-heated my @annieshomegrown GF Mac and cheese in a pan on the stove and it was AMAZING! Better then the first time, seriously.
Push ups from gym session earlier this week 👌🏽💪🏽 I have been going to the gym everyday after clinical. I've been a little insta MIA just bc clinical has been so amazing and exhausting. 🔥🔥🔥🔥🔥🔥🔥🔥🔥🔥 health update: I've found a probiotic that has been helping slightly. I'm sticking with it hoping it will be more beneficial the more I take it @naturemadevitamins definitely is a huge 180 from the probiotic I was allergic to last week 😒

Autoimmune doctor final follow up before I deliver 👊🏼 About a year and a half ago I sat in this very room- and was told that I was lucky that I wasn't pregnant. My body was sick, and had I been pregnant my baby wouldn't have been healthy. I was told if I completely commit to my recovery plan- which included hard changes like completely eliminating gluten, driving over an hour away for blood work regularly, being PATIENT, which was SO hard for me 😅... that one day I would have a body healthy enough to bare a baby again. 🙏🏽 Full circle moment today- as I sit here with my sausage swollen toes and achy back feeling hiccups from within. I DID it... not because I wished it, not because I got lucky... but because I worked my ass off. It took a lot of faith, determination, sacrifice and tears. It took TIME which I didn't think I had to waste. It took appreciation and LOVE for my body. It took understanding.
I cannot wait to look at this little boys face for the first time. I am not sure if I am going to cry or smile first. He was worth every single HARD day. God had my back- and he made me wait for two reasons... 1. I needed to change my perspective and ways. ✨
2. And he was busy working on my boy.
