It's a beautiful day - happy Friday! We started our morning off with delicious banana bread made with @pamelasproducts and topped with their choice of peanut butter or jelly. 😋 Some of the boys also added a little yogurt on the side. I'd wanted to make French toast this morning, but I decided to save that for the weekend!
I have been wanting sushi for soooo long. Our favorite restaurant has a roll called "The Baby Gecko". It's tempura fried with salmon, cream cheese, and jalapeño, topped with spicy mayo, scallions, eel sauce and masago. I knew if I was going to have sushi, I would have to come up with a copycat recipe and boy did this really do the trick! Eel sauce was out because it is like straight sugar, masago is gross so I omitted that too. I had to make my own low carb, gluten free tempura batter because such a thing doesn't seem to exist 😅. My carb eating husband couldn't even tell it had cauliflower in it! AND he made some with actual rice and put it on par with the rice one 💪🏼. So yeah, I'm in sushi heaven right now. •

👉vas a necesitar: 1 y 1/2 taza de arroz inflado, 1 taza de coco rallado, 1 taza de frutos secos picados (yo use almendras, mani y nueces), 1 taza de quinoa pops, 1 taza de manzana deshidratada, 1 cdita de sal, 1/2 taza de miel, 3 huevos o 4 claras, 1 cda de aceite de coco (opcional), semillas a elección (yo use 1/3 taza de girasol y lino). ☝️Como siempre digo, se pueden modificar los ingredientes a gusto y piacere. Pueden agregarle chips de chocolate, pasas, copos de maiz, quinoa arrollada. Si no tienen intolerancia al TACC pueden agregarle avena. Lo importante es mantener SIMILARES las proporciones Secos-Humedos.
👩🍳Primero que nada encende el horno a temperatura media. Por un lado mezcla todos los cereales, frutos secos y disecados, coco y todo lo que quisiste agregarle. Aparte mezcla la miel con los huevos, el aceite y la sal hasta unificar. Volca esta preparación sobre los ingredientes secos y mezcla hasta que se compacte. Coloca sobre una placa previamente rociada con aceite vegetal y llevala al horno durante 10 minutos (o hasta dorar). Al retirar cortar y servir 👉 duran hasta 3 meses en congelador y 1 semana en heladera
👉Podes reemplazar la miel por stevia en polvo
Clearly I am not the best pancake chef 😂 but we're eating @enjoylifefoods pancakes for dinner tonight. Justin thinks I'm weird because I top my pancakes with peanut butter (and @jessicasnaturalfoods strawberry syrup). What do you put on your pancakes?
We have a new quinoa salad this month! Quinoa Primavera - with squash, zucchini, green peppers, carrots, almonds and an herb dressing (made with no gluten-containing ingredients & vegan). Enjoy it for lunch or as a side with dinner.
