Having a child with Celiacs presents it’s challenges. One of those being we have three Christmas parties this weekend and it’s likely he will not be able to eat anything offered. I let my little guy browse Pinterest and choose things he thinks would be fun treats and then recreate them in a gluten free version. These peanut butter reindeer cookies were super easy and my little guy has something special to eat like everyone else. #celiacs#christmascookies#ilovebeingamom#glutenfree#glutenfreecookies

Gluten And Dairy Free Kodiak Cake Power Muffins
2 cups @kodiakcakes Gluten Free Mix
1 cup Almond Milk
3/4 cup brown sugar or coconut sugar
1/4 cup apple sauce or earth balance butter
1 teaspoon cinnamon
2 medium mashed bananas
Combine all ingredients together. Bake at 350 for 15-20 min.

Ok, true story, I haven’t been on here in months...seriously, months. I’ve been terribly unmotivated. I keep gaining weight even if I change nothing. I tried Dr. Furhmans Eat to Live plan which is no processed or refined fats, no animal products, no salt, tons of veggies and where some people lose a bunch of weight the first week, I gained 5 lbs. Hashimotos is no joke when it comes to weight loss. I feel like it’s impossible. I’m so frustrated. Eating should not be so hard. If I can gain eating a cup of grains a day, a cup of beans, no oil, no salt, and veggies then I feel like giving up. Plus beyond that, being a gluten free vegan is tough. I slip up and eat dairy now and then. And to make matters worse the other day i was going to buy some biologe shampoo because I love the smell and look, it has wheat in it! Why put wheat in shampoo? Come on! I can’t ha e anything I like. Anyway, rant over.

SOUP SEASON 🤗 I’m a total sucker for a good Curry Cauliflower Coconut Soup. There’s something so nourishing about turmeric and coconut together! Not to mention it’s combination is an anti-cancer/ anti-inflammation POWERHOUSE! 💪🏻 Give this one a try before the weather gets warm 😋 I used my favorites @bonafideprovisions bone broth and @frontiercoop spices.
2 tbsp EVOO
1/2 tsp pink salt
1 medium head of cauliflower
2 medium sized white onions
2 cloves of garlic
1/2 tsp turmeric
1/2 tsp coriander
1 1/2 tsp cumin
4 1/2 cups chicken bone broth
1 cup full fat coconut milk
Chop onions and sauté in large pot over medium heat with olive oil until translucent. Add chopped garlic, all spices, cauliflower and bone broth...bring to a boil on medium high heat. Reduce to low and simmer until cauliflower is tender with a fork (15-20 minutes). Add soup into blender and purée until smooth. Add back to pot and stir in coconut milk and serve! I added black pepper at the end. Yum yum!

This morning we were finally able to visit @schecktersraw and it by far exceeded my expectations (Even the non vegans gave their stamp of approval). The one thing I love more than eating food is sharing it with others and it brings me so much joy when I can enjoy a vegan meal with someone else. Also shoutout to the non vegans who aren't afraid to try vegan food - you don't have to be vegan to choose the vegan options every now and then! They aren't that terrible 😂
I also received two samples of @kabuto_noodles They have a #glutenfree range using #ricenoodles instead of wheat and eggnoodles. Combined with #asianflavours you’re finally able to enjoy a fairly healthy #fastfood snack at home or to go. For Dutch standards it’s even #spicy but as a non-dutchy I love it! Only one downside... it contains #dairy it would have been perfect if it was dairyfree too. Most #celiacs and #nonceliacglutensensitivity are allergic to dairy or #lactoseintolerant Don’t understand it really why they chose regular milk. As far as I know there’s no cowmilk to be found in a #thaigreencurry or any curry for that matter. So I plead to the people of Kabuto... Please make a workaround for the dairy. Just use dried coconut or coconutcream and you’ll make even more people (#vegans too) happy!

Legit all kids in my classes yesterday minute 5 (I counted) were wearing face masks 😷Then I had the strangest day around and a 5th grader took me to the doctor. Say what⁉️ Ohhhh life in a foreign land, you provide endless adventures and stories!
One thing I’m learning more than ever in the last few years is that life surprises us. If we let it, life challenges us to continually be more open minded, to put down our phones, listen more intently to the person across from us, and to find gratitude in the midst of struggle.
You have the power to change. But only YOU can choose. No one else can do the work for you to become more open, less reactive, and more intentional. You have to do the hard work to get there. But the good news? YOU have the power within YOU. Dig deep and do the hard work to shine bright ✨ The world needs you to be at your best!
So I'm trying this again. You have most likely noticed I've removed my images off my feed. I've always liked the idea of using Instagram as a platform for sharing ideas with like minded people and it's been so much more than that. But I've struggled to find my voice and have felt a bit all-over-the -place in what I'm communicating. I've taken a step back and realized I need to share content that resonates with me and not what I think simply looks good or will get a lot of likes. I started this page to out of a love for food and a desire to inspire others but most importantly myself. I will probably repost some old images but with a more considered intention.
