Lunch day 4 🥗 today’s #challenge22 was to have a sandwich so I went to Pinterest for some inspiration and cane across this rainbow beauty and decided to put my own spin on it, with red cabbage, carrot, cucumber, avocado, tomato, baby spinach and some hummus (homemade) 😜 was so damn delicious and highly recommend 👍🏼 #vegan#veganfood#veganrecipes#doitfortheanimals @_challenge22_
You see two delicious breakfast sandwiches. I see three animals that just wanted their freedom and their life. I see hens enslaved and forced to lay hundreds of eggs. I see hens who are so sick, and so tired they can't stand up or move. I see the male chicks being ground up because they are a "waste product." Oh, they get ground up alive, btw. I see a cow who is forcibly impregnated over and over and over. I see a cow who has her babies stolen from her because we think we need her milk more than her baby. I see her daughters having the same fate. Raped, enslaved and milked for four to five years. Then killed for hamburger, even though in nature she should have lived to 20 or thirty. I see male calves shot with bolt guns at 1 day old because they can't produce milk. Or kept in tiny crates for six months or less and then killed because people want veal on their pasta.
You just see two sandwiches. I can't unsee the things I see. And I wouldn't change that for the world. I'm doing this for the world. I'm doing this for those Earthlings who don't have a voice. Make the connection. Be Vegan.
Day 2 breakfast 🥞🍓 literally the best pancakes I have ever made! Didn’t have much time before work this morning and wanted something that used ingredients I always have so I found this super yummy recipe on Pinterest 😜 •1 cup of oats • 1 cup of any plant based milk (I chose almond milk) • 1 very ripe banana 🍌
And that’s it! Place all ingredients into a blender until very smooth (at this point I also added some vegan choc chips) and cook in a non-stick fry pan on a medium heat until golden. Just did my final vegan shop to prepare for tomorrow 😄 so many yummy meals planned 🍎🍊🍋🍏🍐🥝 really striving to eat the rainbow 🌈 Lunch today was a bit of everything put in a blender as I had plenty to use up, this smoothie had coconut yoghurt, coconut water, blueberries, strawberries, banana, chia and a small handful of oats. So I’ve been preparing for challenge 22 by having two vegan meals a day usually breakfast and dinner which has been the most convenient with work, this was my delicious breakfast the other morning ☀️ my very first attempt at an overnight chia seed pudding made with coconut milk and oh boy was it delicious 😋 also very filling! Well hello Day 4.
I've been really wanting to make one of these health bowls. I roasted pumpkin, mushroom, capsicum, asparagus, tofu, kale - OH MY GOD the kale chips are amazing - topped with chili, seeds, avocado and corn. On brown rice.
Verdict from hubby: A+

It's a Friday night, there's not a lot of food in the house and I'm alone with the baby. I haven't made any fancy vegan substitutes yet and I don't even have any tofu or legumes in the fridge or cupboard. I am determined to have meals that have something iron and calcium rich in there to keep me super healthy and my mum super happy. So here we have pasta with mushroom, asparagus, kale, avocado "pesto", some nutritional yeast flakes and a bunch of herbs from the garden. You need to know that whilst boiling the pasta my baby screamed at me the entire time like I had forgotten she existed and when I was making the sauce she got into the recycling box and poured any remaining contents of the containers onto herself. So it was a quick and very frazzled cook. But, success. There you go mum, good enough?
Before the podcast we stopped in at @lpquk for some dinner. I had the French onion soup with soya yoghurt and it was perfect for a blustery evening! Le Pain is quite good for vegan options - I wish I could afford to go there all the time... 😍💸😩
