As chefs, we often feel pressured to do too much when ideating on recipes, to create dishes that wow on multiple levels. However the more we overthink it, the chances are the more we end up squeezing the love out of the dish. Sometimes, it's okay to keep it simple.
We wanted to adapt the Lawrence family's incredible Pork Sambari, an East Indian curry that uses pearl onions and bottle masala, on to our menu at @thebombaycanteen. And we were of course faced with an important question. How do you up the ante on a dish with so much depth of flavor and soul without losing its integrity?
We could have easily served it in its original curry form and had a fantastic plate of food on our hands. But we also saw the opportunity of adding an added level of texture and contrast by using two parts of the pig, crispy belly on top and soft unctuous trotter meat cooked in the curry, resulting in a dish which holds its own but pays homage to the original. Safe to say we're happy with the results.
