When you make traditional pierogies from scratch it's all about the dough !
You can fill them with anything you like ..vegan, vegetarian or meat stuffing of your choice .. for the dough I used 3 cups of organic flour, 3 egg yolks, 6 tbs. of oil ( extra light virgin olive oil is best )
3/4 tsp .. of salt and hot water
Work the flour , egg yolks and oil with your hands on the counter add water slowly kneading it in until the dough is smooth and not sticky .. Then start rolling .. great workout !
