CHICKEN DRUMSTICKS ✨
Here's an easy and very much toddler approved recipe to hopefully inspire you this weekend; chicken legs & potatoes in honey (not for under 1 year olds) lemon and rosemary. A one pot wonder where you can pre-prepare the glaze, stick it in the oven for about 50 mins giving you chance to sit down with the little people 😘 xxx
I served this last time with some kale crisps that I like to do with a drizzle of olive oil, salt flakes and pepper and a drizzle of maple syrup, popped in oven 190 c for about 8-10 mins xxx have a great weekend 😊

Here’s a quick recipe for Baked Chicken Drumsticks (I cut it in half, but here’s the original from #blessthismessplease ) Ingredients
2 1/2 pounds chicken legs
3/4 cup honey
1/2 cup soy sauce
1/4 cup ketchup
2-3 cloves garlic, minced
salt and pepper
Instructions Preheat the oven to 350 degrees. Lay the chicken legs out and give them a good sprinkling of salt and pepper on both sides. Put them in a foil-lined baking dish with high sides (the foil is to make clean up easier – it’s not essential). A high-sided sheet pan is the best option because it has sides to keep everything in, but it is big enough that the chicken isn’t drowning in the sauce. It will caramelize best if half of the chicken is poking out of the sauce while cooking.
In a glass measuring cup measure out the honey, soy sauce, and ketchup. Add the minced garlic and stir. If the mixture doesn’t combine well, microwave it on high for thirty seconds and stir again. Pour the honey mixture over the chicken legs.
Put the chicken legs in the oven and bake for 45 minutes. Take the chicken out of the oven and rotate it so that the bottom that was in the sauce is now on the top out of the sauce. Put the legs back in the oven. Raise the heat to 425 degrees and bake until the sauce is bubbly and starts to caramelize on the chicken legs. This should take about 15 minutes. Remove the chicken from the oven and allow to rest for 5 minutes before serving. #itswhatsfordinner#quickmeals#weeknightdinner#weeknightmeals#chickendrumsticks
WEDNESDAY: Sticky Chicken Drumsticks!! These were a definite hit with my two tonight & fortunately I wrote down exactly what I put in rather than just whacking ingredients in ad lib like I often do!..so hurrah I can share this with you! It’s definitely worth trying! Tonight was #winnerwinnerchickendinner !!! Hope you & your little ones love it too! Oh &!obviously the kids picked off the chilli’s & the spring onion but it does make it look pretty!!!...and I enjoyed them! 😂
So first of all you need to marinate your chicken drumsticks so grab yourself a freezer/food bag & add the following: 🍗 2 crushes cloves of garlic
🍗 2 tbsp honey
🍗 2 tbsp soy sauce
🍗 1 zest of a lime
🍗 1 tsp finely chopped or grated ginger
🍗 1 tsp sesame seeds • Now make some slits on the drumsticks to allow the marinade tonreally flavour the chicken.
• Add these to the bag and shake well so the chicken is coated.
• Now ideally pop this in the fridge for an hour or so or overnight. The longer the better. • When you’re ready to cook pop the chicken and the marinade into a baking dish and bake in the oven for 25-30mins or until the chicken is cooked through and the sauce is bubbly and sticky! • Garnish with spring onion. Some additional sesame seeds and fresh red chilli!! 😋😋😋 Please tag me if you make these and let me know what you think!! I promise you these are so simple to make but they’re so flavourful! 👍🏼 Currently watching Masterchef sipping on mint tea!! crazy times!!!...trying to resist the urge to grab something sweet! Anyone else find it almost impossible to watch a cookery show without eating something??? Happy hump day all!
