What an insane dinner 😍 Roast chicken drumsticks with homemade sw bbq sauce, corn on the cob, small portion of rice and salad with lots of speed! Tasted so good. Roasted Chipotle-and-Buttermilk-Marinated Chicken Drumsticks with charred Brussel Sprouts & Cherry Tomatoes 🤗

Marinated this for approximately 18 Hours 😁
I realized that Buttermilk is not exactly Keto-Friendly (😅) but I have had this idea for Buttermilk-marinated Chicken since last week so I had to go ahead with it! 😤
Anyways the Buttermilk was mostly used only as Marinade...okay fine, I basted the drumsticks with it a few times while roasting. And I might or might not have fried the Marinade off in the end (to be used as Sauce 🙄😏😌) I can't help it people! IT IS SOOO YUMMMY! 😆
Anyways, here is the Recipe:
• 5 Chicken Drumsticks (or other Chicken parts of choice)
• Cherry Tomatoes & halved Brussel Sprouts
• Olive oil, Salt & Black Pepper to taste
• 1 1/2 Cup Buttermilk
• 3 heaped Tsp. Extra Spicy Mustard
• 2 heaped Tbsp. Mayonnaise
• 2 heaped Tsp. Paprika
• 1/4 Cup + 1 Tbsp. Hot Sauce of Choice (I used Tabasco's Smoked Chipotle Sauce)
• 1 Tbsp. Whole Black Peppercorns
• 1 Tbsp granulated Erythritol
Mix all Marinade Ingredients well. Place Chicken pieces in a large Ziplock Bag & pour the Marinade in. Leave it marinating in the fridge for 12 to 24 hours.
Line a Baking tray with foil, scatter Chicken pieces all over it; top them with a generous amount of the Marinade & place Brussel Sprouts & Cherry Tomatoes all around the Chicken. Season everything with Salt & Black Pepper. Drizzle the Brussel Sprouts & Tomatoes with a generous amount of Olive Oil as well. Bake at preheated Oven (218°C/425°F) for 25-30 Minutes or until the chicken skin crisped up & everything is slightly charred in places 😋
