Preheat oven to 375 degrees and butter a loaf pan and set aside.
Thinly slice two #potatoes , without going all the way to the bottom, and place in the pan. Next, thinly slice half of a #sweet#yellow#onion , and put the pieces of onion in between every other slice. Do the same with half of a #tomato . Sprinkle with chipotle powder and #seasalt , and pour 3 capful's of #oliveoil over the tops. Place in the oven for 35 minutes.
While they cook, take ham leftovers (provided by Mary Bursaw) and cut into small sections.
At the 35 minute mark. Spoon olive oil sitting on the bottom onto the tops of the potatoes to keep them from getting dry, and put back into the the oven for 10 - 15 minutes.
When they're done, place the ham sections around the potatoes (or in the potatoes if you can fit them in there) and sprinkle #cheese on top, and bake for another minute and a half or so.
