🎄Christmas dessert idea 🎄
Here is another Christmas dessert idea!! This time it is vegan friendly!! These are my raw snickers balls that I made a couple of posts back with cashew cream icing! Yum yum!! 🎄Not long until the big guy arrives!! 🎅🎅🎅🎅🎅🎅🎅🎅🎅🎅
Raw snickers bliss balls with cashew cream icing
Serves 12 balls
Calories 136 (without the icing)
P - 4g, C - 17g, F - 5g
6 tbsps raw peanut butter
8 medjool dates, pitted
1 cup shredded coconut
1/4 cup cacao powder
1 tbsp rice malt syrup
1 tbsp coconut oil
1/4 tsp sea salt
1/2 cup cashews, soaked and covered in water for fours hours or overnight
2 tbsp maple syrup
2 tbsp almond milk
1 tbsp fresh lemon juice
I tbsp liquid coconut oil
1-2 drops of vanilla essence
Pomegranate to garnish
1. Place all ingredients into a food processor. Blend until a nice dough-like consistency is formed.
2. With a tablespoon, scoop out the mixture and roll into balls. Approx 12.
3. Place into a sealed container and place in fridge to set for 2 hours.
4. To make the cream, combine soaked cashews, maple syrup, almond milk, lemon juice, coconut oil and vanilla essence in a blender or food processor and blend until the consistency is nice and smooth.
5. Dollop the cream on each ball and top with pomegranate’s.
6. Keep sealed in the fridge. 🎄🎅

Afternoon snack - protein balls
Stops those afternoon sugar cravings and another use of my delicious chocolate complete powder 👌
1/3 cup dedicated coconut
1/3 cup of coconut oil
1 tbs chia seeds
1 sachet choc complete powder- full of ancient grains and sprouts - blend all together in food processor, roll into balls and coat in extra coconut. Yum!
