We're halfway through the week, so in my mind that means it's time to start thinking about something fun for breakfast this coming weekend, and I can't get this Triple Chocolate Zucchini Bread out of my head for some reason...! Since I'm constantly thinking about it, I think it's time to make another batch!
Every year around this time I feel caught between 2 feelings, on one hand I want to eat all of the comforting holiday classics, but on the other hand that leaves me wanting something different like this Saté Turmeric Chicken with Creamy 'Peanut' Sauce that I love to serve with the fresh tasting Asian Cucumber Salad recipe I pair with it. So I just go with both feelings: sometimes it's all Christmas cookies around here, and other times it's exotic fresh flavored dinners that perk up my taste buds and keep me coming back for more!

Sugar-Free Friday (sort of...)
These are definitely as good as they look, and the balls themselves are sugar-free (if you are ok with dates) but I got a little crazy and coated them with chocolate and candy canes...oops. They are simple and perfect for holiday parties like the one I just went to! Check out the recipe I adapted from @letseatcakeblog:
-1 c. Dates
-1 c. Unsalted cashews
-1/2 c. Cocoa (I used a mixture of cacao powder and unsweetened cocoa powder)
-1/2 tsp. Peppermint extract
-2 tbsp. Brown rice syrup
Use a food processor on the dry ingredients until you have an even consistency and then add the liquids. Roll into balls. Chill for 30 min. If you're crazy like me and want a stomach ache, coat in dark chocolate melted with a spoonful of coconut oil, and top with crumbled candy cane. Boom. Done.
