Tropical Salad with Mango, Avocado, and Chicken
2 Tbsp. 100% pineapple juice
1 Tbsp. apple cider vinegar
1½ tsp. extra-virgin olive oil
1 medium Serrano chile, seeded, finely chopped
¼ tsp. chili powder
¼ tsp. ground cumin
¼ tsp. sea salt (or Himalayan salt)
¼ tsp. ground black pepper
¼ medium mango, peeled, cubed
¼ medium avocado, cubed
½ cup cubed fresh pineapple
½ cup cubed jicama
3 oz. cooked chicken breast, boneless, skinless, cut into bite-size pieces
12 fresh cilantro leaves, chopped (for garnish; optional)
1. Combine pineapple juice, vinegar, oil, Serrano chile, chili powder, cumin, salt, and pepper in a small bowl; whisk to blend. Set aside.
Place mango, avocado, pineapple, jicama, and chicken in a medium bowl; mix well.
2. Drizzle with dressing; toss gently to blend.
Garnish with cilantro if desired.

Late afternoon munch 😝 Instead of having a piece of toasted bread as the base, I used a leaf of romaine (carb-less & just as crunchy!) Next I added a piece of @citterio_italia rosmarino (rosemary & garlic coated) ham, 2 runny spiced eggs, 2 slices of a tomato, & 1/4 avocado topped with red pepper flakes, crushed avo pit, & some lemon juice 🍋🌶🥑🍅🍳🍖#mondayvibes#summerdays#strictlyvacay#strictlyeats
Quick and easy dinner
1 chicken breast
1 stalk of broccoli florets
Boil water and season with salt and a little olive oil. Cut carrots to your liking. Place chicken and carrots into boiling water, let cook for 12 minutes. Cut potatoes into cubes. Heat skillet with 1 table spoon of olive oil. Sauté potatoes for 5 min, stir constantly. After 5 min place a cover over skillet stir occasionally until browned. In another skillet heat 1 tablespoon of olive oil, once hot place broccoli in the pan and cook for 2 min. After 2 min add a little water and place cover on the pan for 3 minutes. After chicken and carrots have boiled for 12 minutes, strain and cut chicken into cubes place into a skillet with fresh garlic and a little barbecue sauce, cook for 3 minutes so the chicken absorbs flavor. Ready to serve! BBQ chicken with carrots broccoli and sautéed potatoes.

One of my favorite beverages in the summer is iced green tea and my absolute fave is iced, green matcha. One reason I love matcha is because studies show it has up to 100X the antioxidant power of regular green tea. That’s because matcha uses the whole leaf rather than simply steeping the leaves and drinking the liquid.
Like coffee, matcha contains caffeine, although less than a cup of coffee. Yet, high-quality, Japanese green tea also contains theanine, a calming chemical that offsets the caffeine jitters. So, when you drink it, you feel energized and productive, not nervous.
The simplest way to make a glass of iced matcha is to add 2 tablespoons of matcha power to 8 ounces of filtered water along with some ice. Place the combo in a martini shaker and shake thoroughly. Serve over ice. Add some mint leaves, lemon slices, or limes to the glass or enjoy it as is.

❣️1/2 taza de harina de arroz integral (la podes hacer con un procesador procesando arroz sino la venden en el súper o en dietéticas)❣️ 1/2 taza de harina de almendra, la podes hacer procesando almendras (reemplazable por cualquier harina libre de tacc o con tacc en caso que no tengas problemas con el gluten)
❣️1 huevo ❣️ ralladura de 1 limón ❣️ 2 cdas de jugo de limón ❣️ 1 cda de aceite (coco, maíz, etc)
❣️ un chorrito de extracto de vainilla ❣️2 cdas de leche vegetal o descremada
❣️6 sobres de stevia ❣️ una cdita de polvo para hornear
❣️ pizca de sal 🍋 Precalentar horno a 180. 🍋 En un bowl mezclar los ingredientes. 🍋 engrasar una fuente o forrar con papel manteca o aluminio y con las manos húmedas formar las galletitas. 🍋 Hornear por 8-10 minutos Aprox.
