RECIPE:
For the crust:
1/3 Cup Coconut Oil at room temperature
3 Tbsp Maple syrup
3/4 Cup + 1 Tbsp @ottos_cassava_flour,  sifted (119g - please weigh flour for accurate results)
Pinch of Salt
For the topping:
2 Tbsp flax meal
5 Tbsp Warm water
1 Cup Pecans roughly chopped (105g)
1 1/2 Tbsp Coconut oil
3 Tbsp Maple syrup
1/2 Cup Coconut sugar, packed
1/4 tsp Salt
Instructions: 
1️⃣Heat oven to 350 degrees and line the bottom of an 8x8 inch baking pan with parchment. Rub with  coconut oil.
2️⃣Beat the maple syrup and coconut oil together and stir in the cassava flour and salt until it forms a dough.
3️⃣Press the dough evenly into the bottom of the pan and bake until the edges are a deep golden brown, and the middle is lightly golden, about 14-15 minutes. Press down any spots that rise and Let cool for 1 hour before starting the topping.
4️⃣Additionally, as soon as the crust comes out of the oven, whisk the flax meal with the warm water and refrigerate.
5️⃣Place the pecans onto a cookie sheet and bake them until they smell "nutty" about 8-10 minutes.  chop and set aside.
6️⃣Once the crust has cooled, combine the coconut oil, maple syrup, coconut sugar and salt in a large sauce pan over medium heat and bring to a boil. Boil for 1 min, stirring frequently and then remove from heat. Let stand at room temperature for 5 mins.
7️⃣Then add the chilled flax eggs and mix well. Stir in the chopped pecans. 
8️⃣Pour the topping over the crust, using a spoon to spread out evenly, making sure the pecans lay flat.
9️⃣Bake until the filling looks set, about 20 minutes. 🔟Let stand until it comes to room temperature. Then, refrigerate for AT LEAST  6 hours - overnight ⏸Once chilled, slice and serve COLD! ❄️ .

Sometimes when company is coming I want to have something that isn't the ordinary go to of cheese, crackers and cold carrots and dip. This simple recipe is ready in 30 minutes.... you can Have all the veggies prepped early and ready to pop in the oven before company arrives. The dip can be made early in the day and stored in glass container in fridge. I use all organic ingredients .... don't want to eat healthy and worry about pesticides on my produce. You won't be dissapointed in this and your guests will be wowed!!!! Roasted Crudités with Tahini  Garlic Dip
Ingredients:
🔹12 small carrots peeled and halved lengthwise
🔹1 large head cauliflower, seperated into 2 inch florets
🔹3 tbsp. olive oil
🔹1 cup Stoneyfield Plain Greek Yogurt
🔹1/4 cup tahini
🔹3 tbsp. Fresh squeezed lemon juice
🔹1 clove grated garlic
🔹pinch of smoked paprika, plus more for garnish

On a baking sheet lined with parchment paper tposs carrots, cauliflower and oil, Season.
Roast at 475* turning occasionally, until tender and browned in spots. About 20-25 minutes.
In blender , puree yogurt, tahini, lemon juice, garlic and pinch of paprika.
Put into dish - season with added paprika and serve alongside plated veggies.

Our quick dinner after a late afternoon @costco run! Talking about a few #Costco favorites in my story tonight and this @yourtaylorfarms (#GoToGreens) salad mix is at the top of the list! We ate it with a rotisserie chicken (seriously it’s too good of a deal to pass up!) and had this butternut squash pasta with a little bit of parmesan, salt, and avocado oil. So simple, so easy, and so tasty! The perfect lazy dinner. What do you do on nights you just don’t feel like cooking? #lifeattheclift . . .

Pumpkin Muffins with Maple Cream Cheese

Ingredients:
2 oz. cream cheese
1 Tbsp. pure maple syrup
1 large egg, lightly beaten
1 cup canned pumpkin puree
1½ cups almond flour
¾ tsp. baking soda, gluten-free
1 dash sea salt (or Himalayan salt)
2 Tbsp. raw pumpkin seeds

Preparation:

Chicken Bacon Kale Squash bowl!
Recipe:

Since I started eating a primarily clean diet, 90% of condiments on the shelf are off limits because they are full of junk - added sugar, salt, preservatives, artificial sweeteners, etc. So I learned to make my own, and what I've found is it's actually really simple and cheaper! 🙌🏼

When I want a creamy dressing, my base is Greek yogurt. When I want a vinaigrette style dressing, I'm using some type of vinegar and olive oil.

This Greek salad dressing is sooooo simple: (makes about 4 servings) * 3 Tbsp. white balsamic vinegar
* 1/2 tsp. dried oregano * 1/4 tsp. sea salt
* 1/4 tsp. ground black pepper
* 1 Tbsp. extra-virgin olive oil

Combine vinegar, oregano, sea salt and black pepper in bowl; whisk to blend. Slowly add in olive oil, whisking continuously until blended.

The olive oil will separate from the other ingredients as it sits, so just give it a little whisk or shake before using. This is a salad dressing shaker that I bought for $10 at Kroger! 😊

I find that most recipes (and nutribullet infomercials) go way too heavy on the fruit, adding in 4-5 servings before sprinkling in 2 pieces of greens.⠀

This smoothie contains water, ice, and almond milk as the base, 3 frozen organic strawberries, and the small hand full of organic blueberries you see on top in the picture.⠀

Added at least a cup of organic baby spinach, organic psyllium husk for fiber, and 1/4 avocado for healthy fats and a creamy texture.

Identifying and practicing new choices.  Developing an identity different from that in the past (oooh cookies I must eat them all)!! BEING PREPARED!! Planning health (workouts, food, navigating holiday parties) AND planning celebrations (rest day, sleeping in, enjoying that cheeseburger or piece of cake). Habits form when we commit to and trust the process, one day (hour, minute) at a time. 🙂👊🏼
