Pretty sure I deserve an entire wall of gold stars after making it in and out of @italianstardeli without one of their famous sandwiches and without having a mental breakdown over not having that sandwich. I did get a fancy new olive oil, some Italian #cleansefriendly spreads and this wee smoked sea salt to try. Did I mention I didn’t get a sandwich 😭? Thanks for the awesome help today as always. Cauliflower soup topped w crispy kale and fresh olive oil. Using almost all of the veggies in my fridge and this ended up coming together really nicely. Recipe: 1 onion diced, 1 leek sliced, 2 large white carrots diced, 2 cloves garlic mined, 1 tbsp fresh minced ginger and 1 head of cauliflower. Sautée all of the veggies on medium heat for approx 10 mins. Then add veggie stock so it covers the veggies and cook over medium/high heat until the cauli is tender. Turn to low and hit it w a stick blender, add salt, pepper and fresh olive oil. For the kale: massage w avocado oil and bake for approx 20 mins at 375 degrees until kale is crispy. 2018 started out rough with a sick little who’s still recovering and a sick me who’s energy is slowly coming back online. 2017 holiday travel was fun but hit us HARD! 😷🤧🤢🤬Ready to move on! In other news- Hair is out of the mom bun! @thesanfranciscoblonde returned me to the dark side with a less toxic dye and @nicole_m_amaral helped to lift my frizzy mess with a wave friendly cut and new non toxic Monat products to hydrate and restore some life. Feel like I’m slowly coming back to life.... self care as a working mama is no joke. It’s hard to fit in!
