In the process of making my chocolate-chip cookie dough overnight oats, I discovered a recipe for 4-ingredient cookie dough. Serves 2 --> with a handheld mixer combine 1 1/2 Tb of coconut sugar, 2 Tb peanut butter, and 1 Tb of non-fat vanilla Greek yogurt in a small bowl until cookie-dough texture forms. It's the hub's birthday today, and I've been looking for an excuse to try @simplemills almond flour vanilla cake mix - and today was the day! Let me tell you this cake was delish! 🍰🎁🎉
When we have birthdays in this house we definitely make some kind of special treat. I love all of @simplemills other products, but didn't know what to expect here - I was worried it might be a bit dry. That couldn't have been further from the truth, this cake was moist and had just the right amount of density and texture.
I also used their vanilla frosting which had just the right amount of sweetness. I am not a huge frosting lover, and I have a son who doesn't like frosting at all and usually picks it off of the cake -but he actually ate this one!
I made the cake just as directed on the box, and the only thing I added was some fresh raspberries in between my two layers along with some fresh raspberries mixed with a little bit of lemon juice and lemon zest on top. Perfection! 👌🏻

Made some amazing and EASY healthy jam with our strawberries that we picked! Nothing like knowing where your food comes from!
3 Ingredient Strawberry Jam
* 3 C. Fresh Strawberries (sliced)
* 1 C. Coconut Sugar
* 2 T. Fresh Lemon Juice
1. Add strawberries, sugar, and lemon juice into a wide pan. This will allow excess water to evaporate.
2. Turn heat to high and start cooking. Stir constantly for 5-8 minutes. You can test jam’s readiness by dropping a small amount onto a chilled plate. If it remains firm, the jam is ready. If it is runny, keep cooking for 2 more minutes.
3. Use a funnel to transfer to a sterilized jar. Once in jar, refrigerate and use right away.
4. You can also use a traditional water bath canning method to store long term.

I've noticed a particular trend that has gotten out of hand. Coconut. Or, rather, the abundance of coconut we're consuming on the regular. This photo, for example, is a quick scan through my cabinets and is not unique in our bourgeois commodified wellness culture. Coconut water, milk, yogurt, butter, flour, flakes, sugar, aminos, vinegar, meat, probiotics, cream, etc etc etc. We could easily consume coconut all day in different forms and feel like we're being "healthy". Multiply that by everyday and, welp, that's a major problem. Allergies are inevitable. Digestive distress unavoidable. This is exactly how gut problems and inflammatory responses begin. The key to a balanced inner eco system is variety, pure and simple. Unless dealing with something acute, and only then for a specific amount of time, eat all of the things in moderation. I'm not knocking coconut off its tropical pedestal; it is, of course, delish, but be smart. Don't be a sucker for trends. No food should be our savior. It's that simple. Just as one person can't be your everything, neither can one food item. Period. The end. And thank you for your time. 💋🤓
