Was feeling allll the veggies for dinner tonight. After a weekend of eating out a lot with my family, I was really craving a vegetable-heavy dinner. Yes, I’m studying to be a registered dietitian, but no I don’t only eat “healthy.” A lot of people ask me if I avoid certain foods because they’re unhealthy, and not too long ago, I would’ve said yes and been able to give a long list of foods I avoid because I considered them “bad.” But I’ve come to realize that there is absolutely a time for foods like burgers, pizza, ice cream, and waffles, but also a time for big-ass salads, roasted vegetables, and organic pasture-raised meats. Life is too short to not enjoy your favorite foods, and restriction is no way to live. And food is just food - there are no “good” or “bad” foods!

Salad details: lettuce, red bell pepper, tomatoes, carrots, mushrooms for the base and then @safecatchfoods tuna mixed with a couple tablespoons of tahini (sesame paste), lemon juice, smoked paprika, and garlic powder. Apple cider vinegar for dressing. I also had some roasted sweet potato on the side for some more carbs! 😋

This should get me through the day until I'm back home around 7! Sometimes I pack more and sometimes I pack less. It's all about what your body wants and needs so if I have a big workout the day before/wake up with my stomach growling I might throw in extra protein/healthy fats. This weekend I meal prepped the squash/jicama, made the cookies, and the salad is from dinner last night so it was a quick lunch to throw together!

After yesterday's funk, I spent last night doing a little soul searching. I meditated. I yoga-flowed. I journaled. I read. I listened to music. I dug deep to find the root of yesterday's anxiety, sadness and frustration so that I could work on having a better day today ✨ I woke up feeling refreshed and ready to make this day a joy-filled one. After a great morning workout, a trip to the farmers market and time spent being productive, I feel back to my old, happy self. Thankful that I've learned the tools that help me reconnect with myself and lift myself out of hard times 💛

I think it's important to let yourself feel the emotions you're experiencing. Don't mask them to simply try and fake your way to feeling happy and positive. Don't be afraid to be sad. To cry. To be frustrated. Let yourself FEEL. Let those feelings work themselves out. Search inside of yourself to find out WHY you're feeling that way. And then decide on ways to turn it around and bring joy back into your life. 💛 happy Saturday sweet friends. I hope it's been a good one 😚

Spending the weekend with some of my favourite ladies, i.e., my mom and aunt. Spent last night at black dogs and then watching Canadians Worst Handyman. Today we're going to the local apple orchard but first we needed to stop for breakfast at @aromacafe217 It was awesome. I split the lox bagel (shown) and the chorizo, egg, and cheese bagel sandwich (not shown) with my mom. It was absolutely amazing. Perfect bagel and a deliciously spiced chorizo. Eating out with my roommates before the homecoming game. Chain restaurants can be tricky as a vegan, but the side menu is where it’s at. However, I’m a little disappointed in @ihop for their lack of vegan options. It’s kind of pathetic you guys can’t make a freaking vegan pancake, come on! It’s ridiculously easy! My parents are making the trip from Florida to Maine to visit me this weekend, so I’m making a special dessert for us to have one night! And it involves wild Maine blueberries that I froze when they were in season a couple months ago + @gelatofiasco Maine wild blueberry crisp gelato 😍😍 Stay tuned to see the finished product!
My parents are making the trip from Florida to Maine to visit me this weekend, so I’m making a special dessert for us to have one night! Trader Joe's Chocolate Filled Crepes? 🤔 not so bad. The first time I tried them, I warmed them up in the microwave. Didn't like it that much so I tried heating them in a skillet with a little oil. I think I like them more this way! Oh, and of course - paired with blueberries. Yum! 😋

Happy Friday!! Personally so ready for a day off. This week has been long long long, and need some time to catch up on myself. In the mean time, I have to get through a day of work..starting with this yummy breakfast! Breakfast burritos always hit the spot. I scrambled 2 #cagefreeeggs with @bluediamond almond milk, topped with red pepper flakes & wrapped it in a #lowcarb & #wholegrain tortilla shell. Paired with a cup of coffee & ready to start the day! Well in all honesty, stress isn't always a choice. Think of that phrase as more of a positive mantra to help calm you down and redirect your thoughts. When I'm stressed I remind myself that, even if it's not 100% a choice of how I feel, it IS my choice how I react to that stress. Don't let stress consume you, don't give that stress life, don't let that stress break you down. Be RESILIENT in the face of stress and use it to MOTIVATE you to work hard and get. it. done. 👊🏻 So here's your Friday reminder that you kick a**, you CAN do it and all you have to do is believe in yourself, your strengths and your abilities. Oh and killer leg days followed by good food never hurts when your stressed 😉

Very excited for this. Late night snack = @traderjoes Country Pumpkin Spice Granola Cereal and Organic Coconut Milk. I am very very pleased! I picked up this cereal (porque I love granola) and 2 cans of coconut milk (почему что я очень люблю кокос - russian for "because i really LOVE coconut" *hint im a Russian major) on a whim. Best decision ever. As a college student, I can barely finish a carton of milk in a timely manner and constantly run the risk of wasting milk :( In purchasing canned milk, I have easier portion control and reduce the risk of wasting milk!! Cheers!! Ура!!!! 😊💃🏾
