Let's just say I wish my zoodles had turned out this photogenic tonight 🙈 Picture this but soggier and being eaten out of a Tupperware and topped with semi-burnt chicken instead of these bomb turkey meatballs (recipe on my blog!!) 😅 TBH I wanted to capture this real af din for you guys but I also forgot how crazy early it gets dark now... guess my ugly dinner pics will have to wait 😉 Nothing profound here tonight though, just trying to keep myself fed while also getting sh*t done 🤓✌🏼 Thank goodness for meal prep is all I have to say! Was feeling allll the veggies for dinner tonight. After a weekend of eating out a lot with my family, I was really craving a vegetable-heavy dinner. Yes, I’m studying to be a registered dietitian, but no I don’t only eat “healthy.” A lot of people ask me if I avoid certain foods because they’re unhealthy, and not too long ago, I would’ve said yes and been able to give a long list of foods I avoid because I considered them “bad.” But I’ve come to realize that there is absolutely a time for foods like burgers, pizza, ice cream, and waffles, but also a time for big-ass salads, roasted vegetables, and organic pasture-raised meats. Life is too short to not enjoy your favorite foods, and restriction is no way to live. And food is just food - there are no “good” or “bad” foods!
Salad details: lettuce, red bell pepper, tomatoes, carrots, mushrooms for the base and then @safecatchfoods tuna mixed with a couple tablespoons of tahini (sesame paste), lemon juice, smoked paprika, and garlic powder. Apple cider vinegar for dressing. I also had some roasted sweet potato on the side for some more carbs! 😋
Here is a look into what I packed for lunch today ->
Thai cabbage salad (@twopeasandpod) baby kale, cucumber, cinnamon roasted butternut squash/jicama, vegan kale, cashew, and basil pesto, sea salt crackers, guacamole, and one of the cinnamon spice squash cookie (@blondegoneclean)!
This should get me through the day until I'm back home around 7! Sometimes I pack more and sometimes I pack less. It's all about what your body wants and needs so if I have a big workout the day before/wake up with my stomach growling I might throw in extra protein/healthy fats. This weekend I meal prepped the squash/jicama, made the cookies, and the salad is from dinner last night so it was a quick lunch to throw together!

I got a little sick from working closely with some kids, but I think I’m overcoming it! Lots of drinking weird concoctions and spraying strange things in my mouth. It’s making me feel witchy!!🎃

•Asparagus •Parsnips (wasn’t a huge fan so I didn’t really eat them. Sliced too thick!)
•Curried Broccoli (soooo good but I got way too much!)

• and snow peas that never made it to the picture because they were too damn delicious!
Also, still 2 papers away from freedom! One will be done tonight, for better or for worse 🤷🏼♀️
Studying with friends > studying alone. Post picture, this yummy salad was quickly smushed into a Tupperware because I decided I needed to get out of my apartment for a little to study with @laney_schenck for what seems to be an impossible sports nutrition exam 🤷🏼♀️ at least we could laugh about it.. for now! But hey, I learned for sure that omega 3s help your brain in this class, so at least I'll get one question right (bless u salmon)
dEATs>>> lemon baked salmon (with crispy skin that I ate before placing on the salad bc it's that good), spinach/romain, figs, roasted sweet taters and a roasted squash, plus some feta, pecans, craisins and pumpkin seeds later topped off with a homemade mustard balsamic 😋
Here’s that dessert I was telling you guys about - wild Maine blueberry crumble! 😛 It’s made with almond flour, @kerrygoldusa grass-fed butter, chopped walnuts, cinnamon, lemon juice, and maple syrup! The recipe is from @dianesanfilippo, and you can find it on her blog. Sooo good, and made even better with @gelatofiasco Maine wild blueberry crisp gelato! The perfect dessert to give to a bunch of Floridians who never get to enjoy wild Maine bluebs!
Who would pass up the opportunity to go to @burgatorybar when you get to pick the location and it is right there? Answer: no one. Chicken burger with Cajun rub, some grilled onions, grilled pineapple and jalapeños. Perfect sweet and spicy combo. And of course I designed it to be naked. #pittsburgh#collegefoodie#paleo

After yesterday's funk, I spent last night doing a little soul searching. I meditated. I yoga-flowed. I journaled. I read. I listened to music. I dug deep to find the root of yesterday's anxiety, sadness and frustration so that I could work on having a better day today ✨ I woke up feeling refreshed and ready to make this day a joy-filled one. After a great morning workout, a trip to the farmers market and time spent being productive, I feel back to my old, happy self. Thankful that I've learned the tools that help me reconnect with myself and lift myself out of hard times 💛
I think it's important to let yourself feel the emotions you're experiencing. Don't mask them to simply try and fake your way to feeling happy and positive. Don't be afraid to be sad. To cry. To be frustrated. Let yourself FEEL. Let those feelings work themselves out. Search inside of yourself to find out WHY you're feeling that way. And then decide on ways to turn it around and bring joy back into your life. 💛 happy Saturday sweet friends. I hope it's been a good one 😚

Hey, you! Yeah, you! Feeling stressed? Overwhelmed? Like you've just got too much on your freaking plate? SAME. Also remember how I said in my stories that "stress is a choice?" Well in all honesty, stress isn't always a choice. Think of that phrase as more of a positive mantra to help calm you down and redirect your thoughts. When I'm stressed I remind myself that, even if it's not 100% a choice of how I feel, it IS my choice how I react to that stress. Don't let stress consume you, don't give that stress life, don't let that stress break you down. Be RESILIENT in the face of stress and use it to MOTIVATE you to work hard and get. it. done. 👊🏻 So here's your Friday reminder that you kick a**, you CAN do it and all you have to do is believe in yourself, your strengths and your abilities.
