Every so often, when I'm at a loss of what to make for supper, I reach for the polenta! This was tonight's supper - my very own specialty recipe for a polenta lasagna made in 30 minutes. Every time I make this it's always different (as it depends on what's on hand) but always filling and much enjoyed by my family! I know polenta is sort of an odd staple to have on hand, but I find it easy and versatile. One day, when I perfect my recipe, I'll have to enter it in a contest...maybe. It was a cold dreary day today so I couldn't think of anything better to have than a warm bowl of soup.
Turkey sausage and lentil soup
Sauté an onion, diced carrot, diced celery in olive oil until translucent. Fry sausage. Add together in large pot. Add 12 cups of beef or veggie broth and 1.5 cups of rinsed lentils, boil for 30 mins. Add 2 large zucchinis chopped and 1 cup of red wine cook another 30 mins. Then add a can of diced tomatoes or two chopped tomatoes. Season with pepper, sea salt to taste and Italian seasonings. Cook for another 20-30 mins. Served with corn bread.
