All of our Cookery School courses begin with a trip to forage on the seasonal fare from our Market Garden. We've been making the most of our organic corn these last few weeks and we cannot tell you how deliciously sweet they are - so sweet that you can eat them raw from the husk. Jason, our Junior Tutor has been drying any excess corn to make into homemade polenta - perfect with parmesan as a base for a delicious stew. Hands up 🙌🏻 for those of you that have read Rosamund Young's book, The Secret Life of Cows or for those of you that at the very least love cows 🐮 A recent article by @sustainablefoodtrust shares Young's journey as a responsible cattle farmer. During her forty+ years with the lovable spotted animals, Young has observed how cows have very strong personalities, and laments how many cows are just known by a number on factory farms now instead of by name, like on her farm. This really resonates with us. Each summer we spend in Suffolk, we visit #oldhallfarm , where we meet the resident cows and get a chance to try our hand at milking. Each of the cows has a name, a very strong personality, and clearly a favorite farmer who milks them. So here's to buying more responsibly produced dairy products from farms that show their cows some ❤️
#woodfiredadventcalendar day 16 and we've made a Christmas tree mince pie to share. Roll out some ready-made puff pastry and cut 2 large tree-shaped triangles. Spread mincemeat on one of them with a sprinkle of flaked almonds and grated orange zest. Put the other triangle on top and gently press down. Brush with beaten egg and cut branches up each long side of the triangle about 1cm apart. Twist the individual branches and put the tree on a floured metal peel. Put the mince pie in a hot oven, about 200C, no fire ( that one in the picture is just for show). Bake until the pastry is cooked through and golden brown and use a peel to turn it round as needed for even cooking. Serve hot with ice cream or at room temperature cut into pieces for a party.
