This is what “40” looks like for my client who is celebrating her birthday this weekend at Six Senses Samui, a rustic rainforest retreat in Koh Samui, Thailand. The island oasis, hidden away at the end of a raised promontory looking out into the rock-fringed Gulf of Thailand, maintains a true sense of Thai-infused luxury with a laid-back beachy vibe. Spacious split-level thatch-roofed freestanding villas strewn across a hillside spanning 20 lush acres are decked out in rich polished hardwoods, bamboo and creamy muslin, with open-plan bathrooms boasting sunken tubs for four, outdoor showers and floor-to-ceiling panels that retract to welcome ocean breezes and offer stunning sea views. Pool Villa Suites boast decks and lanais with daybeds and a generously sized infinity-edge private plunge pool. If you can tear yourself away from the serenity of your secluded villa, there is chill restaurant and lounge area where cushy daybeds are suspended from the ceiling as well as a slate-lined infinity pool with views of the emerald waters. During weekly movie nights under the stars, films are projected onto a large screen by the pool. The ultra-pampering signature spa offers an encyclopedic array of indulgent treatments in open-air pavilions. For booking through @intheknowexperiences, clients will receive an upgrade, daily breakfast, a complimentary 50-min massage for two people and early check-in / late check-out.
And here they are my nettle tortelli (giant, floppy edged ravioli) inspired in their size by the wonderful recipe in the #acquacottathecookbook by the very talented @emikodavies Mine are with nettles in the pasta and in the ricotta I used for the stuffing. Their colour is amazing and the texture of the pasta is just as amazing, so gorgeous! ⠀
They re so stunning I want make them again and again....... ⠀
Done and ready to rest now, it was one of the best mixes ever, the addition of the nettle cream made it so lovely to knead. All I have to do is wait a while before I can start making my ravioli or tortelloni, really. I have a plan. I'll be preparing the filling whilst the dough rests.⠀

My garden haul this morning-despite being away for a while, my garden took off. When I left I had big beautiful blossoms but no zucchini! When I came back there was Zucchini half the size of my arm. These are the smaller ones. Looking forward to making some spiralized zucchini pasta with an avocado cream sauce later today😊 Happy gardening and enjoy your Saturday my friends!#growyourownfood
