Three weeks ago eight gorgeous souls joined the three day organic vegan foundation course. They are out there in their homes and lives cooking with inspiration from the course and showing others how delicious it is to live in a world without hurt. Eight more people start the course on Thursday can’t wait to meet and work with them. There is chance to join the food revolution again in November. 6 more places left in the November course.
Whipped up this healthy dinner for tonight! 🌱
I grilled 2 medium sweet potatoes, half a zucchini and 3 Tbsp of corn with a Tbsp of avo oil and a pinch of garlic salt in a pan until golden. I then added and mixed through a large handful of Kale (you can use spinach instead if you don’t like kale) for the last 2 minutes of cooking.
Mix through 2 small handfuls of brown rice and top with as little or as much ricotta as you like and you are done! 🤗👌
Family fajitas!! Never mind packet mixes - 1tsp cumin, 1 tsp paprika, 1 tsp oregano, 0.5 tsp chilli flakes (optional), 2 crushed cloves of garlic, splash of lime juice (out a bottle is grand), salt, 2 tsp olive oil. Finally got to intentional meal prep for the next week. It does takes several IG posts , magazine articles etc. for an idea of batch cooking to get into my head to be implemented to life.
People, who knows marketing, how many times consumer has to see an ad to finally buy a product? I think it is the same with healthy living ideas.
I just have to have a lot of prepared , different and exciting food to be available in the refrigerator . With this sunny roasted butternut squash , I am trying to restart my Paleo. I can do it. Feeling sick is no fun. Wish me luck ☺.

And that's a wrap. A month of dinners made in 2 days, from prep to freezer. 26 meals, allowing for 4 Fridays of fish and ample leftovers for lunch. I've done it a bunch of times, but this was by far the smoothest and most efficient. 💪👍 Time for more coffee!
