This may look like a sloppy green mess to you but to me it is another addition to this week's meal prep!
Quinoa tacos with roasted corn, black beans, baked buttermilk lemon pepper chicken, roasted cumin cauliflower, fresh avocado, and my honey's cilantro garlic sauce (its basically crack sauce cuz its so damn good), with some key limes as a garnish. YUM!

Attempting to balance out all the recent eating out indulgence! Home made tuna fish cakes for tea today - yummy and filling.
Here’s my rough recipe:
1 tin of tuna, 1 regular potatoe, 1 sweet potatoe, three spring onions chopped, half a red pepper chopped, 1 egg, fresh parsley, squeeze of lemon, salt & pepper.
Cook and mash the potatoes, fry off the red pepper to soften, add all ingredients together, shape into patties (I made 6) & roll in some sunflower seeds. Cook in the oven on high until slightly browned. 👍🏻

Working hard in the kitchen this morning. We bottled 13 jars of homemade chicken stock (from our own homestead raised chickens) for the freezer. I've got a batch of yogurt on the go and toasted and puréed a spaghetti squash from our fall harvest to make muffins using freshly milled organic spelt flour. Feels good to be productive in the kitchen again.
