While up at Green Bay I began incorporating meat back into my diet, and gained a lot of insight on proper cooking methods for such dishes. I am currently working on a variety of brines. For this one I used brown sugar, Worcestershire, juice from half a lemon, pink Himalayan salt, rosemary, two cloves of garlic, half an onion, and Dijon mustard. All measurements were eyeballed as this was how most things operated in a commercial kitchen setting. I grilled off my chicken, and incorporated some lemon herb quinoa, garlic roasted asparagus, and a spinach salad topped with bell peppers, red onions and a lemon balsamic vinaigrette. #brining#chicken#quiona#asparagus#spinach#cookyourownfood

You guys!!! I LOVE making my own broth. It's so simple, makes the house smell yummy, and you know EXACTLY what's in it. Have you ever looked at the ingredients in store bought broth? Why are there 18 ingredients in chicken stock? Or Bone broth? Or veggie broth? And almost all of the ingredients are impossible to pronounce. Make your own! So simple and easy to store in the freezer! Whatever you chose to make depending on your food choices, clean, plant based, whole 30, Paleo, etc. make sure you add a few good "glugs" of ACV! This baby will help pull out the vitamins and minerals and get them in your broth! I make mine in a Crock-Pot for 24-36 hours on low. Enjoy!!!
Motivation is not sometimes that comes easily. Motivation is not something you deserve it’s something you have to work to be able to get it. You have to motivate yourself because who will motivate you if you aren’t able to motivate yourself ? You have to stop saying you are lazy, saying this will make you think it’s okay to do nothing. In the reality it is fine to do nothing but not all the time. M E A L P R E P 🌱. I have been a bit lazy this new year, using lack of time and energy as an excuse and just grabbing whatever I can find as I walk out the door. As a result it's usually not enough food and I've either had to spend money on expensive snacks or coffee because I'm tired/hungry by the afternoon. And they don't nourish me in ways I need so I end up feeling more tired/hungry later on. And so the cycle continues. But this week I'm making a more conscious effort to break that cycle where it starts (with me, at home). And finding my groove again is feeling good!
Today I have a cacao banana oat smoothie for breakfast, a veggie stir fry (carrot, zucchini, beans, tomato, amaranth greens, garlic, chilli, pepper + tamari) with eggs for lunch and ryvitas I'll top with tahini (I keep a jar at work) and this delicious heirloom tomato I picked up at the markets. Prepping food takes a little more time and effort yes, but the results are always so worthwhile. Today my mind + body will be nourished with food I've prepared myself, and that's a really nice thought isn't it? To know you've done something good for yourself like that. Don't view meal prep as a chore, but rather an act of self love and self respect. It could be that simple shift of mindset that will get you motivated to make more of your meals. Food shopping done and dusted for another week 😊 I had $100 like normal to spend and I used $75.10 at Aldi and $27.85 at Coles. I decided to buy 2x taco kits (one for this week and one for the following week) as they were half price so I borrowed that from next weeks food shopping money. The total came to $102.95 🙌🏻
Spent the day at the Old Spanish Sugar Mill. The chimney and sugar vats were built by the Spanish in the late 16th century, but the mill itself was built in 1830. As the name implies, the mill was powered by water to produce sugar by crushing sugar cane. The restaurant itself was started in 1961 by Peter Schwarze, and it's been operating ever since. It's a great place for a day trip, especially since waits can go for over 2 hours before being seated! After which, you pay for the privilege to cook your own food. Don't let that scare you. This place is pretty awesome.
