Status Day 5: My vegan week has almost come to an end, and I know that this does not show me the full potential of how amazing your body can feel on a plant-based diet, but I already learned so much I didn't know before! I was already eating vegan food regularly, but mostly vegetarian and sometimes chicken or seafood. In just 5 days I already see the start of how different you can feel on a fully vegan diet. I'm surely more hungry and more tired due to the transitioning period, but I also feel like this is how I am supposed to be eating, my body feels right, more comfortable and at ease, no bloating, never overfull, no tiredness after eating, sleep has improved, and just a general feeling of wellbeing that is very noticeable. Also, a vegan diet does not have to be boring! You just have to do some work in figuring out where you can get the substitutes for the foods you love eating. It requires more awareness and work in your recipes, maybe a few good supplements, and a good blender to make your plant-based life easier! I do think the social aspect makes it hard - with a boyfriend who loves meat and only a very few vegan restaurants to choose from in town. And then there is the Danish love for cake (sounds silly, but the struggle is real). Of course there are some foods that I have missed, but I haven't craved anything, also not sweets, and cooking tasty vegan food is not hard so satisfaction is easy to achieve. I will definitely eat more vegan food at home from now on, and I will also be on the lookout for it when I go out. Especially the supermarket substitutes are here to stay. All in all I feel this week gave me lots to work with. Not only is this about personal health, it is also about animal rights and love for the environment. Another dinner win. Wednesdays we have our late Gymboree class, so dinner is always something easy. Tonight I heated up these frozen tempura veggies and I was surprised how much he liked them! Especially the green beans, baby corn, and sweet potato. Veggies were from the Karma line at Coop.
The sauce it came with was a bit spicy for him, so I made him his own sweet and sour sauce by mixing mustard, ketchup and a bit of date syrup. He practically licked the bowl! 😂
We also had some vegan schnitzel thing from Lidl, (supposed to be fake pork maybe? No idea...) And some macaroni mixed with olive oil, hemp hearts, nutritional yeast, and homemade cream cheese that my husband made this past weekend. .
