Final course of Epi-Pen not Included - Curry Crab & #Cassava Gnocchi over Corn Soup 🤤
This course is mash up of two popular dishes in #Trinidad , Curry Crab & Dumpling, and Corn Soup. •••••••••••••••••••••••••••
My grandmother must of made Corn Soup at least 3 different times for dinner. (Im still confused as to how island people eat soup & drink tea in 89 degree weather) & each soup had different type of dumpling; plain flour, flour & cornmeal, and flour & grated cassava. •••••••••••••••••••••••••
I thought of different types of dumplings in other cultures & thought about the Italian dumpling, a gnocchi; which means "little pillows". I made cassava gnocchis stuffed with crab. Some of them were tossed in brown butter & old bay and the other were tossed in a curry butter.
The corn soup was puréed and then passed through a strainer to create a silky texture as opposed to the traditional way of have chunks of corn on the cob, carrots, and pumpkin. ••••••••••••••••••••••••••
This is definitely not my Granny's soup but it brought back great memories of her and it was my favorite course over all because of that. •••••••••••••••••••••••••
