Cottage Cheese Jelly Mousse 🍓
I made some of these today, they are such a great low calorie high protein treat, perfect for keeping you away from the chocolate cupboard 🙋
They are so easy to make - mix a sachet of jelly crystals with 250ml boiling water and 300g cottage cheese (works with Greek yoghurt too). Leave to chill for 2 - 3 hours. They last for 3 days or so in the fridge. .

🔹1 medium apple (mines golden delicious) microwaved about 2 min or until soft

I love cottage cheese and pineappples! But this was not thr case a few years ago. I loathed cottage cheese, only because of how it looked because I clearly never tried it. But this is my go to snack if I'm feeling hungry or go to breakfast. Its simple, fast and has so much protein it'll keep you full for awhile. Adding in the fruit (Don't buy the one that has fruit added, although delicious it packs a lot of unwanted sugars) will add a sweetness that comes from natural fruit sugars.
Yes it takes more time to prepare but the fresh fruit is amazing and refreshing! O Organics cottage cheese is one that I get.
