Happy Friday! Hope you all are staying cozy during this winter wonderland. My car was an icebox this morning! It's so cold but I love winter because I get to enjoy delicious food! This soup might be the easiest thing you can put together. Swipe to see how it came together. This is my lentil salad soup recipe, literally 😊
Lentil Salad Soup:
-1 cup lentil
-1/2 cup diced beets
-handful fresh spinach -sliced olives
-1/3 cup shredded carrots
-sliced bannana peppers
-handful sliced mushroom
-1 tbsp #glutenfree @mccormickspice taco seasoning
-1/2 tsp garlic powder
-1/2 tsp onion powder
-1/2 tsp turmeric powder
-salt to taste
Soak lentils overnight. Drain the lentils, add all the ingredients in a pot with 4-5 cups of water. Simmer uncovered for 1.5 hours or use a slow cooker.
The purpose of this recipe is to show how you can use simple ingredients, even a salad or other leftover vegetables to put together a hearty soup that is filling and nutritious! Lentils provide protein, while beets add fiber, and spinach and carrots are high in vitamin A. Get creative. Cheers!
Hi beautiful people! Hope you all are staying warm during this extra frigid winter. When there's snow outside, I always want to eat cozy baked goods. I am at a new rotation site and had to get creative for dinner since I only have a handful of dishes and ingredients. I wish I could rotate with my kitchen, where I have any gluten free ingredient I need a reach away. But the best part is, it allows me to get creative and that's my favorite thing about baking/cooking. It's such a relaxing hobby. Alright, enough chatter, this one is my nutty baked oats. It's great as a post workout meal, breakfast or any other meal your heart desires. Cheers!
Nutty Baked Oats:
-1/2 cup oats
-1 tsp peanut butter or any other seed or nut butter
-2 tbsp milk of choice
-1 tbsp sweetener (I used brown sugar)
- 1/2 tsp vanilla extract
Mix everything together and bake at 350℉ for 15 minutes. Remove and enjoy! I topped it with pistachio, dried cranberries and dried raspberries.
You can make a batch of it and enjoy for days!
