Dinner today: Spinach crepes served with sautéed mushrooms in a béchamel sauce with peas and raw beets.
Inspiration: The simple years of my life when TIME was all my husband and I had for each other. Our budgets were tight but we managed to make meager meals like mushrooms and crepes (that I'd order at our favorite little Atlanta restaurant) a highlight to work hard through an entire week for. Those years in my life are not coming back for a while (what with kids and their craziness) so in the meantime I anchor myself onto happy memories through simple creations from my kitchen. And that makes me happy!
