Ingredients For the CupCake:
1- 18.25 oz box vanilla or white cake mix (I used a French Vanilla white cake).
. 1 cup all-purpose flour
. 1 cup vanilla sugar or granulated sugar
. 3/4 tsp salt
. 4 egg whites
. 1 1/4 cups water
. 2 Tbsp vegetable oil
. 1 cup (8oz carton) sour cream
. 1 tablespoon vanilla bean paste
. 1 tsp almond extract
For the Frosting:
. 1 lb (4 sticks) unsalted butter
. 4 cups powdered sugar, sifted
. 1 tablespoons vanilla bean paste
. 2-4 tablespoons heavy cream or milk
To make the cupcakes:
. 1. Preheat the oven the 325 degrees fahrenheit. Line the cupcake pans with paper liners.
. 2. In a large bowl, whisk together the dry ingredients. Add the wet ingredients and beat on medium low speed until the ingredients are incorporated, about 2 minutes.
. 3. Use an ice cream scoop to pour the batter into the paper liners for even distribution. Bake for 15-20 minutes, and cool completely before frosting.
So lately I’ve been on this huge Earl Grey Tea with Almond Milk binge. I drink at least 2 cups at work and then another one or two before bed🙈... yes, I know that’s a lot of tea😬 BUT, I bought this box of assorted teas and I discovered Lady Grey, omg, what have I been missing out on all my life!! So, I took it one step further and made Lady Grey Cupcakes, you guys, if you’re a tea drinker and love lightly sweetened cakes and treats, these are delicious! Not sure what time of year is best to sell these, HELP!

I also had some quality baking time with my mini me the other night, turns out I made banana mupcakes (a cross between a muffin and a cupcake) THE best and cutest thing ever haha. 😆
