To honour the Italian pasta we serve our dish in the shape of the Italian flag. As you know we eat glutenfree, and because we're not that fond of the GF-pasta we will not only share with you a GF-pasta with a colourful beetroot-parmesan-pesto but also a zucchini-pasta with a avocado sun-dried tomato-pesto (this is the usuall way we eat "pasta", the raw food way) and to this we serve a white ricotta-lemon-garlic sauce with thyme roasted cauliflower on top. And for our lovely bunny friends (this week also) we serve this dish with carrot bacon! And Please! note our cute sheep-cauliflower-friends on top. #plushiesMK2017#plushiesMKpasta
For the beetroot-pesto use 2 pcs of cooked cold beetroots. Mix together with cashew nuts (or pumpkin seeds), garlic cloves, grated parmesan (over the top), olive oil, lemon juice and salt & pepper and some water.
Boil good pasta al dente and mix with the beetroot-pesto. .
For the avocado sun-dried tomato pesto mix basil, grated parmesan, cashew or roasted pine nuts, garlic, olive oil, water, honey, 1/2 avocado, red pepper flakes and salt & pepper.
Make zucchini pasta with a spiralizer and mix with the zucchini pasta. 100% raw food. .
For the thyme roasted cauliflower. Take small florets and rost in the oven with olive oil and thyme, stir halfway until they starts to get a little bit brown on top.
Mix baked garlic, lemon zest, ricotta, thyme and salt & pepper.
Fry shallots until golden and add the mix and some hot pasta water, heat up.
For the Carrot bacon, make long and thin carrot slices. Mix tahini, maple syrup, gluten free soya, rapeseed oil and some liquid smoke. Let the carrot marinate for 30 min. Put the slices side by side on a baking sheet and let them bake in the oven on 200°C, 15-25 min until they are as crispy as you want them.
