Come cuando you are so photogenic that you take zero styling. Mi gente, it's romanesco season in PDX and I'm SO excited. This Italian veggie (the love child between cauliflower and broccoli) is one of my FAVE summertime eats. The texture, the color, the flavor—I love it allll! But how do you cook it???
I like to blanch mine (this preserves the color and helps keep it crunchy) and then sautée them in oil with garlic salt, lemon, and Parmesan. To blanch: cut the leaves and stem off and slice your romanesco into whatever size piece you like. Boil a large pot of water and prepare a large bowl with ice water at the same time (VVV important). Once water is boiling, place romanesco in the boiling water and test every 30 seconds until its cooked to your desired fineness (I like crunchy veggies and this takes about 2 mins for me). Remove with a slotted spoon and IMMEDIATELY plunge in ice water. This effectively "shocks" the vegetable and stops the cooking so it's not overdone. This is my favorite way to prep veggies nowadays because I am not a fan of mush textures, and with color + texture like this you reallllly don't wanna miss out on crunch and vibrancy.

Craving some BBQ while in Bali so we went to @bettyloubali. Southern comfort done right in Bali. 500g pork ribs with all great rub and tasty BBQ sauce. The brisket both on its own and in the burger was juicy and had a nice ring on it. Not pictured were chicken wings and pigs ears which are both a good option to indulge in. Definitely recommend @bettyloubali for a feed while in Bali.
