Is it 5 o’clock yet? I haven’t left my house in over 24hrs but I’m getting ready to venture out and take the Meems on a walk 🐾 Reminiscing on last week’s patio weather and happy hour with @atasteofkoko. We checked out @yuyoaustin and I loved all the Japanese influenced dishes. So light and fresh! I had no idea how much Japanese cuisine has influenced Peruvian food. That’s your fun fact of the day 🙌
12 hours in the air didn’t seem all that long once I was greeted with 80 degree weather and this seafood feast: pisco sours to start, bread with chancho en piedra, congrio (Chilean eel) a la plancha, tuna tartar, pulpo bravo & ceviche empanadas paired with @1865_wines’ Chardonnay and chilled Pinot Noir 😍. Then flan, celestinos (crepes layered with manjar- i.e. dulce de leche), tres leches cake and a digestif of Araucano #wellfedlifeinchile
5 Minute Boozy Bananas Foster
A delightful dessert!
¼ cup salted butter
¼ cup brown sugar (loosely packed)
½ teaspoon cinnamon
¼ cup chopped walnuts
2 bananas, cut in half lengthwise and widthwise **see note
4 tablespoons rum
Vanilla ice cream or whipped cream
Add butter to a preheated large non-stick skillet. Add brown sugar and stir until it begins to soften into butter. Allow to cook for 1 minute.
Add cinnamon and chopped walnuts. Stir and cook 1 minute.
Clear a space in the center and add bananas cut side down. Cook for 1 minute.
Add rum around the exterior of the pan to soften sauce and cook for 2 minutes.
Optional: ignite the rum with a long-handled match and shake pan until flames die out.
Serve immediately over vanilla ice cream or with whipped cream. **Note: Bananas on the just still green side hold up the best texture wise. But any ripeness can be used.

I felt pretty good about meeting my #mealplanning goal last year, so I added a twist for 2018: Each month, I’m digging into one cookbook, with a different recipe each week. This month, it’s the #KoreatownCookbook , and this week’s recipe was Tongdak, a whole roasted chicken stuffed w/ ginger, scallions and garlic. I added parsnips b/c I had a ton of them, and it worked pretty well together! Next week: That @dirtcandynyc Korean fried broccoli is calling me... 🥦
