After a crazy busy week, a steaming cup of hot coffee and a flaky peach danish is exactly what I needed to start the weekend ☕️ I’ve heard a lot about the pastries from the Rolling Pin Bakeshop, so I decided my weekend treat was going to be one of their flaky croissants. Those carbs are TOTALLY worth it because this peach danish was 👌 The dough was pretty good and the peach filling just the right amount of sweetness. They have 4-5 other danish flavors so I guess I’m gonna have to make this a weekend tradition 😜

Quise hacerlo bien fresco y con mucha fuerza, la proporción es 100% masa madre, 200% harina integral y 200% agua. Lo dejé fermentando toda la noche a temperatura ambiente.
Hoy arranqué 4 panes hechos totalmente con harinas orgánicas, todos la misma fórmula, cambian las harinas y el método. Mañana veremos...

Each day our bakers make cherry, cherry cream cheese (shown), raspberry, peach custard, lemon curd blueberry, and sweet cream cheese danishes. They're available at cafes all over central Illinois.
