Pancakes: every generation, culture, and family puts their own spin on them. A timeless tradition, they date back to the Stone Age, when grains were ground into a fine powder with with the most simple of tools: a rock. The Greeks and Romans ate them, the Elizabethans, and folks from the American colonies. We have revitalized pancakes, reserved them for those slow mornings after a lie in with a loved one, or for the brunch table amongst friends with sparkly, fruity libations. Pancakes represent community, comfort, and companionship. These fluffy little prehistoric flapjacks speak to my old soul. They are sweetened with bananas rather than sugar, and are topped with fresh peaches to reflect the local Virginia flavors. What's your favorite recipe, and what do pancakes represent for you? ❤️
