A rainy Tuesday morning calls for a steaming bowl of Chicken Sopas (Filipino version of chicken noodle soup). This is one of the earliest dish I have mastered to prepare and cook. I use butter to sauté the ingredients and I don’t skimp on the milk. It’s one of those dishes I don’t “lighten up” (use ingredients of lesser calorific value) because it just doesn’t taste the same.
