Call it tortilla, call it Spanish Omelette, whatever you call it, it's one of our favourite dishes. Super-slow cooked potatoes and onions to bring out their sweetness, mixed with free-range beaten eggs and then cooked on the hob until set as taught by our friends at @laschimeneas. This one we've added some local brown crab meat, a dusting of grated Parmesan cheese and some chopped fresh parsley.
