What do you envision when you think of being bullied as child?  Maybe for you it was hair pulling on the school bus or unkind words in gym class.  Bullying hurts.  One would imagine as adults and as dietetics professionals we could leave that type of behavior behind along with dodge ball.  It seems not to be the case when it comes to social media.

Bei mir ist es heute eine Smoothie-Bowl mit Feigen und Brombeeren geworden 😍 Definitiv gehört bei mir frisches Obst zu einem perfekten Frühstück. 🍎 Es ist wichtig jeden Tag Obst zu essen, am besten 2 Portionen, das sind etwa 250g. Das wären beispielsweise eine Hand voll Beeren und 2 kleine Feigen. Oder aber 1 Apfel und 1 Banane. Auch ein Glas Saft zählt als eine Portion.
Obst ist ein guter Lieferant für Vitamine, welche eine wichtige Bedeutung in der Ernährung haben.

My Sunday farmers market haul: 4 bananas 🍌, carrots 🥕, 2 tubs of blueberries, 1 head of broccoli, 1 cucumber, 1kg sweet potatoes 🍠, 1 kg snow peas, bok choy, 4 pears 🍐 and a tub of yellow cherry tomatoes 🍅. All for just over $20! And in the process I’m supporting my local farmers and community. What’s your favourite local farmers market?

Small little scramble of brussels sprouts, carrots, tomatoes, broccolini, and spinach! After sautéing, I cracked an egg on top and stuck it in the oven for 10 min at 400 F (till the whites are set, but the yolk is still runny 😍) after I pulled it out of the oven I sprinkled some oregano and s&p 🍳🍳

Adelaide Üniversitesi ve Güney Avustralya Sağlık ve Tıp Araştırmaları Enstitüsünün gerçekleştirdiği çalışmaya göre plastik kapların tip2 diyabet ,kalp damar hastalıkları, hipertansiyon ile bir bağlantısı olduğunu ortaya koydu . Plastik kapların içerisinde bulunan Ftalat maddesi çalışmaya alınan bireylerin idrarında görülmüştür. Ftalat düzeyleri daha yüksek olanların , kalp-damar hastalığı, tip-2 diyabet ve yüksek kan basıncının daha yaygın olduğunu anlaşılmıştır. Hangi mekanizmadan kaynaklandığı tam olarak bilinmesede plastik kapların kronik hastalıklara yol açtığı görülmüştür. Plastik kap kullamına dikkat etmeliyiz 😉

Today I walked nine miles and possibly caught a cold but it’s okay because I had my first Chicago style hot dog. The hotdog itself was way better than any hot dog you buy at the grocery store. I’ve decided that my subconscious motivation behind traveling is just so I can eat at new places. Not pictured here is the deep dish pizza I had for dinner. It was too dark to take a picture to share with y’all, but just take my word for it that it was beautiful and delicious. FNCE goes into full swing tomorrow and I’m super stoked. Quickest meal prep ever and oh so satisfying. 1 cup dry whole wheat pasta, 1 bunch asparagus, 1 pckg. sliced mushrooms, 1 pckg lean ground turkey, 1 jar of pasta sauce (I used roasted garlic & red pepper) and some seasoning. How freakin CUTE are these jack-o-lantern stuffed peppers? I cant even begin to tell you how delicious (& nutritious af) they are! This is one of the few tricks & treats ApatFit clients will be receiving this week! I H I G H L Y suggest giving these a try. Orange bell peppers are wicked rich in Vitamin C (acts as an antioxidant to fight off those pesky free radicals!!), carotenoids, fiber, and more! I used ground chicken for my protein rather than ground beef. SUPER tasty. To start, you will need: 🎃4 orange bell peppers
🎃1 lb ground chicken
🎃Extra virgin olive oil
🎃1 Onion, finely chopped
🎃2 garlic cloves, minced
🎃2 tsp. chili powder
🎃1 c. cooked brown rice
🎃1 c. chicken stock, divided (low sodium)
🎃1 (15 oz) can fire-roasted tomatoes
🎃1 c. shredded Monterey Jack, divided (mine was without bc i hate cheese)

Now that youve got your ingredients, LETS COOK:

1. Preheat oven to 350 F
2. Cut the heads off & little faces into your peppers (KEEP the tops!)
3.Place peppers & tops in baking dish & drizzle olive oil, pepper, & salt
4.Heat a tablespoon of olive oil in a large nonstick skillet. Sauté onions until soft (5min), Add garlic and cook until fragrant (30 sec). Add chicken and sauté until cooked. Turn off the heat and drain the fat.
5. Return skillet to stovetop over medium heat. Season with salt and pepper to taste and stir in the chili powder. Add the fire-roasted tomatoes, 1/2 cup chicken stock, cooked rice and 3/4 cup of cheese. Stir until the mixture is evenly combined.
6.Divide rice and chicken mixture between the hollowed out peppers. Top with cheese if desired.
7. Pour remaining 1/2 cup chicken stock into pan. Cover with foil and bake for about 30 minutes. Remove the foil and cook for another 10-15 minutes, until the peppers are tender and the cheese is melted.

Once I’m done with my marathon, I think we are going to take up competitive hiking because this girl is a BOMB HIKER! I was afraid she’d get tired and I’d have to carry her 25# butt, but she was so amazing! She was pulling ME the whole 4 miles! She kept looking back with this smile like “Come on, Mom!” Ugh it was so wonderful. I completely fell in love with my sweet pup all over again today! Thankful for a dog that loves hiking as much as I do❤️🍂
