I’m so sad I had to miss all the pretty snow in Atlanta and be at work, but if we’re being honest, I would have only last 30 minutes outside because I hate the cold 🤷🏻‍♀️ So ready to curl up with my fuzzy blanket and candles to binge watch bravo 🙃 What a great Sunday night. Not sure if this works for everyone but it’s something I’ve been doing since the beginning of residency to save time. I pack my lunch every single day and it takes very little extra time (probably less since I’m not fighting lines in the cafeteria) since it’s already what’s cooking for dinner. We never make anything extravagant, just some combo of veggies and proteins 🤗 and always a little extra for a few days of lunch salad toppings. This here is mushrooms/asparagus/riced cauliflower sautéed in @thenewprimal marinade, raspberries, egg, and avocado on top on mixed greens•

I have one word for you guys:
CURRY ROASTED SWEET POTATOES 😵🍠 ok that’s 4... but wow! I have discovered that I have a deep love for curry spice ever since I tried a curried chicken salad sandwich from @urth_cafe and I could not get my mind off of it. these were the brain child of my craving and they turned out amazing. just cut up some jap sweet potatoes into slices, drizzle some evoo over them, salt and pepper, curry powder, and some coconut nectar. bake at 400F for about 30 minutes, flipping them halfway. 
ALSO: can we just acknowledge those ribs 😍 I don’t eat red meat or pork often because they don’t appeal to me, but when I have the craving, I go for it! I’m so incredibly amazed at how far I’ve come with my eating disorder and how much peace I have eating the foods my body wants now. giving myself a little pat on the back for freakin LIVING 💃🏼 #aye

It’s amazing to me the mental strides I’ve made in just the last month and a half. The night before my boyfriend left I cried the entire night but not because of what you’d think. Yes I do miss him but I knew we’d make it as a couple. I cried because of certain situations and how people were treating me. I kept saying in my head “I’m a horrible person, I’m a terrible friend, I’m not a supportive individual, no one wants to be around me or be friends with me. I’m no good”. And to be honest we all have flaws we all have times when we fall from our best. But I’ve grown into my own the last month and a half. I’ve gained a confidence in myself to not allow the words of small minded individuals affect me. I don’t concern myself with their petty bullshit because I know damn well that I will be there for my people at 3am when their world is falling apart even if mine is falling apart too. I’d drop everything for my people. I stand by each and every one of them regardless of how i feel. I give consistently with no request of getting anything back in return. If you’re friends with me I take it seriously because there is a level of devotion I give and truthfully everyone in my circle does the same. I know my character and nothing anyone says is going to shatter my belief in myself. I’m not saying I’m perfect but I aim to do good everyday by every individual I come into contact with. And if someone feels it’s necessary to bash on my character solely to make themselves feel better than so let them. I truly pity the struggle they are experiencing within themselves to feel the need to do that. #rantover

I have to say, I am shocked at how well this reverse diet is going. I had an untracked meal Saturday night and then increased my macros on Sunday and woke up today even tighter! I made these turkey meatballs to add to a veggie filled tomato-based pasta sauce to top wholemeal pasta and zoodles (zucchini noodles). These were in my prepped meals for the week. The meatballs also have some extra veggies popped in as well. Swipe across to mix up the usual Bolognese recipe 🍝

Bahan :
1. Roti tawar 20 gr
2. Pisang hijau 10 gr
3. Telur ayam 10 gr
4. Gula pasir 10 gr
5. Margarin 1,5 gr
6. Susu sapi 50 gr

Cara membuat :
1. Campur susu, telur, dan gula hingga menyatu
2. Setelah menyatu panaskan diatas kompor sebentar
3. Siapkan cetakan, oles dengan margarin
4. Susunlah roti-pisang-roti lalu siram dengan campuran susu-gula-telur
5. Panggang dengan oven krg lebih 15 menit
6. Setelah itu keluarkan roti dari cetakan

Gula pasir 10 gr 5. Margarin 1,5 gr 6. Susu sapi 50 gr Cara membuat : 1. Campur susu, telur, dan gula hingga menyatu 2. Setelah menyatu panaskan diatas kompor sebentar 3. Siapkan cetakan, oles dengan margarin 4. Susunlah roti-pisang-roti lalu siram dengan campuran susu-gula-telur 5. Panggang dengan oven krg lebih 15 menit 6. Setelah itu keluarkan roti dari cetakan 7. Have any tomatoes kicking around? Try these super easy spinach quinoa and pesto stuffed tomatoes, it makes a great side dish and looks pretty too! .
1. Preheat oven to 400 degrees.
2. Cut off the top of the tomatoes (6-8).Use a spoon with a serrated edge to slip in and scoop out all the seeds and membranes. Set aside.
3. Drizzle 1 Tbsp olive oil in the bottom of the baking dish and spread it around. Place tomatoes in the baking dish. Drizzle 1 Tbsp of olive oil over the top of the tomatoes. Sprinkle salt & pepper on each tomato.
4. Cook quinoa according to package instructions. Set aside.
5. In a large saute pan, cook the diced onion in 2 Tbsp olive oil, for 5-8 minutes or until translucent. Add the cooked quinoa, spinach, 6 tbsp pesto, tomato insides,garlic powder, Italian seasoning, salt and pepper. Mix together, let cook just until spinach has wilted and everything is combined.
6. Spoon filling into tomatoes and put the top back on.
7. Bake for 30 minutes or until the skin starts to blister
